Ingredients
- 8 ounces cream cheese
- 2 cups Monterey Jack cheese (divided)
- 1/2 cup sour cream
- 2 -15 ounce cans of sweet yellow and white corn mix(drained)
- 1 - 15 ounce cans of Rotel tomatoes (or any diced tomato, drained)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- jalapenos or habaneros if you want that extra spice!
Instructions
- Preheat your oven to 375F
- Add all ingredients to a bowl adding in just 1 a cup of Monterey jack cheese leaving the rest for the topping.
- Place mixture into a baking dish and sprinkle remaining Monterey jack cheese on top.
- Place dish in oven for 30-35 minutes until golden brown throughout
