I have a "love hate relationship" with cooking. I sometimes enjoy cooking a lot but sometimes I dread the idea of cooking. However due to many food price increase and hike, cooking is still my first option when it comes to food. Generally if we dine out, we have to spend about RM50 for my family of 4. That is quite a bit of money especially with cryptocurrency still in quite a bare season.
Also, I am much used to homecooked food since I was young, like it is my default hence I naturally fall back to it. We cook rather simple, just some simple Chinese food - usual stir-fry, , deep fry, soup, steam and that's about it. Nothing too complicated.
Usually when my mum in law is around, I let her do the pleasure hahaha because she cooks better, my son will not bother her when she cooks, and too many cooks definitely will spoil the broth. I just enjoy eating and when she goes out, I will take over though the food I cook may not be what she is familiar with. I try to ensure there is protein paired with fibre for every meal. On rainy days, I'd love to have a soup boiled to warm the tummy.
Today I am steaming chicken thighs her way. This is what she usually does so I just "copy and paste". She bought this Beacon Seaweed Chicken which I am not sure why they are called seaweed chicken. Maybe they are fed seaweed? Hahha perhaps. They look extremely big in size comparing to those I got from the usual grocer. Check out the comparison.
So I slit the chicken thighs a bit to help it cook faster and thoroughly.
Seasoned the thighs with some salt and white pepper, followed by a bit of light soy sauce.
So what are the herbs or ingredients I used?
🍗 3 chicken thighs
🍗 Red dates
🍗 Gojiberries
🍗 Some dried cordyceps flowers (to nourish the lungs)
🍗 Brands chicken essence
Alright, next thing ti do is just arrnage the herbs on the chicken thighs in a plate with some depth (as it will produce a bit of gravy later)
Pour in a bottle of chicken essence.
Now all ready to be steamed. You may use a steamer. I used a wok with water and a steaming tray.
Let it be on high fire till the water boils then switch it to low fire to steam for 40 minutes.
So I left it to do the magic on its own while I cooked up another vegetable dish, Siew Pak Choy.
This is an even easier dish to cook. I JUST NEEDED TO PREPARE AND WASH THE VEGETABLES, MINCED SOME GARLIC.
Heat up oil in the wok and add in the minced garlic.
After the garlic turns a bit golden yellow, add in the washed Siew Pak Choy vegetables. I added a bit of oyster sauce for taste.
I like to add white pepper to my vegetables too.
Season with some salt.
And then it is done!
Checked on the steamed chicken and it is also done!
Easy peasy, lemon squeezy!
These are some easy food recipes I have up my sleeve when I need to finish cooking before 10am when I am having morning classes with students. While I was cooking, my youngest son was also in the kitchen and would not leave me alone so he played with my bell peppers which I plan to cook another day. So he had been washing them over and over.
