I hope everything is okay. I'm busy eating good food with my family and filling up with positive energy. Today, I would like to share with you a recipe that is unique to Turkey. Çiğ Köfte recipe is actually a dish made with meat, but I would like to share with you the recipe we tried without meat. It is generally consumed without meat in Adıyaman region. I think this is tastier and healthier. Now we can move on to the schedule.

Umarım her şey yolundadır. Ben ailemin yanında güzel yemekler yiyip pozitif enerji dolmakla meşgulum. bugün yine sizlerle Türkiye'ye özgü bir yemek tarifini paylaşmak istiyorum. Çiğ Köfte tarifi aslında et ile yapılan bir yemek ama ben sizlere etsiz olarak denediğimiz tarifi paylaşmak istiyorum. Adıyaman yöresinde genelde etsiz olarak tüketiliyor. Bence bu hali daha lezzetli ve sağlıklı oluyor. Şimdi tarife geçebiliriz.

2 cups fine bulgur | 2 su bardağı ince bulgur |
1 tablespoon of tomato paste | 1 yemek kaşığı domates salçası |
1 tablespoon of chili paste | 1 yemek kaşığı biber salçası |
1 onion | 1 kuru soğan |
scallion | yeşil soğan |
parsley | maydanoz |
Isot, crushed red pepper, dried mint, salt, black pepper | İsot, pulbiber, kuru nane, tuz, karabiber |
lemon | limon |
liquid oil | sıvıyağ |
tomato sauce | domates sosu |
Put the bulgur, tomato paste, spices, chopped green onion and dry onion on the tray. Cut the lemon into quarters and add it along with the peel. And we knead well. The difference of this recipe from barren is that we knead the bulgur without soaking it beforehand. It needs to be softened by kneading.
Bulguru, salçayı, baharatları, doğranmış yeşil soğan ve kuru soğanı tepsiye alıyoruz. Limonu dörde bölüp kabuğuyla birlikte ekliyoruz. Ve güzelce yoğuruyoruz. Bu tarifin kısırdan farkı bulguru önceden ıslatmadan yoğuruyoruz. Yoğurarak yumuşatmak gerekiyor.
When the ingredients are mixed together, we add the tomato sauce and continue to knead. While we are kneading, we need to take water for a bowl with us, to wet our hands from time to time.
Malzemeler birbirine karışınca içine domates sosunu ekleyip yoğurmaya devam ediyoruz. yoğurma işlemini yaparken yanımıza bir kabın için su almamız gerekiyor, ara ara elimizi ıslatmak için.
When the bulgur starts to soften, we add the oil we heated in the pan and the finely chopped parsley. While I fry the oil, I throw bread into it and the fries are delicious. We do not add bread to the meatballs.
Bulgur yumuşamaya başlayınca tavada ısıttığımız yağı ve ince doğranmış maydanozu ekliyoruz. Ben yağı kavururken içine ekmek atıyorum kızartması lezzetli oluyor. Ekmekleri köfteye eklemiyoruz.
The oil makes the bulgur softer. Now all that's left is to knead it well. Finally, remove the lemon peels from it. And our Vegan Çiğ Köfte are ready. Now we can shape it with our hands and prepare it for service.
Yağ bulgurun daha güzel yumuşamasını sağlıyor. Artık geriye güzelce yoğurmak kalıyor. Son olarak içinden limon kabuklarını çıkarıyoruz. Ve Vegan Çiğ Köftemiz hazır. şimdi elimizle şekil vererek servise hazırlayabiliriz.
