Chocolate's like these fascinate me the most, The way they are made from bean to bar the packaging and even the subtle design on the packaging.
I personally haven't researched on the bean to bar process but my taste buds have examined quite a few lovely Artisanal Indian Chocolate brands over the years and I personally prefer dark chocolates be it 60% 75% or even 90% I love them all.

You have brands like Mason & Co, Animane, Naviluna, Soklet and All Things Chocolate that are quite famous for their gorgeous bars of chocolate they produce. All of their beans are locally sourced from Indian farms to make their fine chocolate bars.
Now these chocolate bars are something I bought all for myself when I was returning back to Mangalore from Pondicherry in 2018 I brought them from this wonderful cafe called PY Cafe.
ohh I love Soklet, Expensive but worth it.
