Taiwanese Orh Ah Mee Sua (蚵仔面线) or Taiwanese Oyster Vermicelli with Pig Intestine is must eat dish in Taiwan. It may sound like a simple dish but you be amazed (or annoyed) why it could taste so different from shop to shop.
It is no brainer statement to say the best and most authentic Orh Ah Mee Sua can only be found in Taiwan. Perhaps it is because the ingredients which it was a perfect match of the texture of the noodle with freshness of the oyster in fragrantly boiled soup.
So how does it taste actually? Let me described as such, for an authentic bowl of Orh Ah Mee Sua:
**Noodle **- A spoon of the noodle will likely melt in your mouth with minimal chewing require. The texture is soft and silky, which made every bite a effortless savour.
Oyster - On its way to your mouth, you will likely already smell the freshness of the oyster. It has to be as fresh as if from the sea next door, and the taste will be sweet as candy
Pig Intestine - This maybe optional but it will not be authentic without it. Infact some stall may replaced it with some pork meat but it never taste the same at all (I would say not nice at all). This pig intestine is just like the best supporting actor - the film/main actor will not shine without him.
**Broth **- This is the ultimate test. The thickness cannot be overly thick or under, it must be perfectly blend with the noodle where you can maneuver in the bowl with small effort. The taste will be fragrant oyster freshness combine with sweetness of the soup stocks, with a tad of porky taste (due to the intestine) and texture a bit of starchy feel.
Next time when you have a chance to taste a bowl of Orh Ah Mee Sua or Taiwanese Oyster Vermicelli with Pig Intestine, just remember what I described here and give it a score accordingly.
