So, yesterday I cooked a pot of healthy beef bone broth using bone marrows, tripes, beef chuck plus some brisket, and I did keep the broth for other usage. I cooked this!
Stew beef with radish and carrot! Eat with rice!
The children didn't really fancy all the tripes and tendons, so for the broth, I used to cook beef stew for them, Chinese way, by adding radish and carrots. I was happy to buy all the meat at discounted price, so this called for another budget-friendly meal.
Ingredients
- homemade beef bone broth
- radish
- carrots
- miso paste
- beef cubes
- suji (beef tendon slices)
Let's cook!
Firstly, added in the homemade beef bone broth into the pot and a tablespoon of miso paste and heated it up.
While it was being heated up, clean the beef cubes and washed the radish and carrot and cut to desired size. Added all into the beef bone broth and set to boil.
I noticed the amount of broth was way too much for the little ingredients so I quickly took out suji from my fridge to add them in too.
Wash the suji and pre-boiled to remove the scum, followed by rinsing them. This would result in super clear suji. Suji is basically beef tendon part but the tendon is attached the some meat too.
Added all the suji into the same pot, and let it boiled in high heat for 5 minutes, followed by simmering 1 hour.
Then, the dish was done! Yay!
Due to the miso paste, the beef bone broth was tasty enough, no salt was needed thereafter. The boys loved the eat stew like this with rice, so rice it was. I only gave them the beef cubes, and kept the suji for us adults.
Very simple and delicious looking soup 😋 Even better that it meets the budget of many 😊
