Simple Meals: Herbal Soup for Lunch & Japanese Chicken Curry for Dinner

Although I quite often blog on eating out, actually I do cook at home quite often for the boys. Eating out is more for special occasions or for my husband and I to spend some uninterrupted time to bond a little. Here's my simple cooking today. I cooked a pot of herbal soup to nourish lungs and spleen for lunch and a big pot of Japanese chicken curry for dinner. Let's!

Nowadays, the boys usually eat heavy breakfast rather late at around 10am, so they will not be so hungry during lunch, sometimes we skipped rice lunch and opt for sandwiches, sometimes I cook simple lunch like this one, just a pot of soup to be eaten with rice.

Herbal Soup with Pork Neck Bones

Mum bought me this pack from Chinese drug store to nourish the lungs and spleen, it is believed can expel some dampness stucked in the body.

Super easy and fast cooking for this one. Basically, I just started with preboiling the bones to remove any scum, followed by rinsing them until clean. I love my soup looking clean and not muddy.

Then, I added the herbs into the pot of water. The herbs in the packets were only 4 types: solomon's seal aka 'yu zhu', Chinese yam, Chinese artichoke and wolf berries. All these contains antioxidants, essential nutrients and fibre for the bodies. And natural sweetness too.

Followed by adding the pork neck bones. Using pork neck bones would help to increase the natural sweetness of the soup.

After boiling 3 hours, the pot of nutritious yummy soup was done! Just adding a little salt would do. So mouth-watering.

Japanese Chicken Curry

As usual, I used my favourite Vermont Curry brand.

The ingredients used are onions, chicken fillet cut into cubes, carrots and potatoes.

Firstly, sauteed the onions till fragrant brown, followed by adding the chicken, carrots and potatoes. Continue to fry till the chicken was no longer pinkish, then adding water to simmer a little till the vegetables were soft.

Next, remove from heat and adding in the Vermont Curry cubes.

Continue to stir till the cubes dissolved incorporated into the whole pot of meat and vegetables.

I added fried omelette for extra protein!
So, another simple dinner for home, we loved to eat this with rice. I went to make myself clean and together we had a happy dinner! We actually had leftover of this Japanese Chicken curry for the next day, yay!

It is Ramadan month and usually evening time will be crazy traffic jam, and by dinner time, most restaurants will be jam packed too. This makes me looking forward to cook for every dinner time.
