A mug cake is a little cake that is mixed and baked directly in a mug. We love mug cakes in our house as my daughter can make them on her own and you can whip one up in just a few minutes for a fresh delicious treat. Here is a basic mug cake recipe to try out!
This recipe is for a peanut butter and chocolate chip cake. You can adjust some of the ingredients to change up the flavour (like using nuts or dried fruit instead of the chocolate chips). Don't substitute the peanut butter though or it won't hold together right. I have another recipe that uses olive oil instead of peanut butter, which I will post in the future.
So, get your ingredients together:
- 4 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1 tablespoon white sugar
- 1/4 cup milk (we used oat milk)
- 3 tablespoons peanut butter (crunchy or smooth)
- 3 tablespoons chocolate chips
- 1 microwave safe mug
Mix everything in a coffee mug, except for the chocolate chips.
Whisk or stir with a fork until everything is smooth and well blended. Then mix in the chocolate chips.
Put your mug in the microwave, and microwave for about one minute at full power. Check to see that it has set. If not, keep going for another 10 to 20 seconds. Every microwave is a little different so you may have to experiment a bit to get the exact timing down.
Take your cake out, and let it cool for a few minutes. It will be quite hot in the middle, so don't rush it!
Then eat your lovely fresh-baked cake right out of the mug.
That's all there is to it. These are wonderful little desserts you can make when you only need a single-serving of cake, and it doesn't heat up the house by using the oven. A nice little baking bonus during these hot summer months.
