Who wants to eat BINIGNIT during Holy Week like me?

It has become part of the tradition of Filipino Catholics to abstain from eating meat every Friday starting from Ash Wednesday as a tribute to the Passion of Jesus on Good Friday.

Everyone is urged to sacrifice a little of their comfort food for Holy Week, especially on Holy Thursday and Good Friday.

Part of the Visayas culture is to cook Binignit every Good Friday. Every household has its own version and even posting on Social Media their own version of this delicacy.

This colorful snack is made of landang, glutinous rice, and sago cooked in coconut milk with cube slices of sweet potato, yam and saba ba nana. Another secret ingredient for a special binignit is jackfruit and a drop of vanilla flavoring.

This sweet, rich, creamy and delicious meryenda is very easy to cook.

Start by slicing the ingredients into small cubes. Boil water in the large pot and add in landang and glutinous rice and stir occassionally. Once the landang and rice are soft, add the sliced sweet potato and yam followed by sago and jackfruit after few minutes.

After another boil, pour the coconut milk then flavor it with brown sugar and vanilla flavoring.

Taste and serve. Yum yum 😋
