Smooth and Creamy Blue Cheese Pasta
Blue cheese adds a taste of sublime luxury to linguine. This dish is super quick and easy to make and the results are of a gourmet standard, so much so that you can serve this when you entertain. It’s a great crowd pleaser; everyone seems to love this dish and if I serve it to guests they always ask me for the recipe. So here it is.
Ingredients
50g Blue Cheese
125ml Cream
200g Mushrooms
1 Red Onion
½ cup peas
Handful of Italian parsley
½ Tbls red chili flakes
Salt & pepper
½ packet Linguine
Olive oil
Serves 3
Prep and cooking time 18-20 min
Method
Chop mushrooms roughly (chunky)
Dice onions
Add linguine to boiling salted water (add 2 ½ tablespoons of salt to the water)
Cook pasta according to package instructions until al dente (see video)
Sauté mushrooms in olive oil until all liquid has drawn
Add salt to taste (¼ teaspoon)
Add onions to pan and sauté until translucent
Crumble (grate) blue cheese
Add chili flakes, pepper and cream to pan
Melt cheese over low heat (do not boil cream)
Add chopped parsley and return to heat
Add linguine to pan and stir to combine
Serve with extra grated or crumbled blue cheese
