I just want to share a simple recipe for shiitake mushrooms that I found on Google.
These mushrooms were supposed for a hotpot, but the hotpot never happened because of life priorities. π
This cued me to search for a recipe online because I do not like food to go to waste. Sometimes I forget that I have a produce in the fridge until it is unedible. What a waste, right?
And so, I found this recipe. Not complicated and looks delish! π I bent the ingredients a little bit depending on what were available in the pantry.
Ingredients:
Shiikate mushrooms
Oregano
Parsley
Mozzarella and Cheddar cheese
Butter
Mayonnaise
I washed the mushrooms first and then took off the stems. Although I read that you were not supposed to wash mushrooms as they absorb moisture and the water takes away the flavor, I still did it because they were a little bit dirty with bits of soil.
The head of the mushrooms serves as the vessel so that it will contain the mayo and butter together. Broken ones are still okay. I just made sure not to put too much.
I used a teaspoon to smear the mayonnaise with the butter. Butter should be soft or at room temperature to make the process easier. π§π
What I had on hand was the salted version, so no need for extra saltiness. π§ After that, sprinkled oregano and parsley for herby aroma and color. πΏ π
Carefully transferred the shrooms to a metal pan. This is a cake pan but it works fine with baking any food.
I made sure the shrooms were upright so that the butter and mayo would melt as it supposed to. β¨οΈ
Generously scatter the cheese on top making sure that every shroom gets an even amount. π§ π
Instead of using the oven, I opted for the airfryer instead. I set the time to 6 mins and temperature to 180 degrees Celsius. I do not like to burn the mushrooms so I periodically peek to see if the mushrooms were golden brown.
Tadaa~ π€©β¨ The cheese melted the way I like! the mushrooms were tender and still got the earthy aftertaste. The mayonnaise gave the creaminess to every bite.
I added more parsley for that herby aroma~ πβ¨ My mistake was forgetting to brush oil on the bottom of the pan thus to prevent mushrooms from sticking from it.
A quick and versatile dish as a snack or a side dish to the main course. β¨π
