I was super excited to make chile rellenos for the first time, especially since I have never even tried chile relleno before, but heard about it a lot, since my husband really likes them.

To make chile relleno (stuffed green pepper with ground meat and cheese or just cheese, which have tried once), you need the time and patience, but it is well worth it.

First I made some salsa from fresh, cooked and blended tomatoes with some green peppers, onion, garlic, basil, paprika and salt.

After washing the green peppers and applying some avocado oil on the peppers, I cooked the peppers on plancha on med to high heat, until the skin gets burned a little.

Once the peppers are cooked, I put the inside a ziploc bag so that the peppers can sweat.

Meanwile, I will prepare the rice and the ground beef.

Once the peppers are ready, you have to take the skin of the peppers, by scraping it and pealing it off.

Next,I would cut them in one spot so that I can take out the seeds.

Now it's time to fill them up with cheese and ground beef. I used mozzarela and queso especial cheese, but either one will work.

Next I would fill the peppers with the meat. Make sure you don't fill it up too much because you should be abld to close the pepper.

Now it's time to roll the peppers in flour, which can be a bit tricky.

Next, started to warm up the oil in the pan ( I personaly only use either olive or avocado oils fof health purposes) and then I started to beat 5 egg whites, using a mixer, until very foamy and then added the yolks and beated the eggs some more untill the mix was pretty thick, in order for me to dip the peppers in it.

You flip the peppers over so that ig gets cooked on both sides.

Once the peppers are ready, take them out and put them on a plate with some paper towel so that it can absorb as much oil as it can.

The last thing I would do is cook the fried peppers with the salsa that I prepared earlier and cook it for just few minutes. Onky cook the peppers in the salsa, if you are going to eat it right away, otherwise just keep the aside until you are ready to serve.

And the dinner is served. Everything turned out very delicious. My husband approved of it and really liked it. I was very proud of myself, since it was quite the job and quite tricky too, but ghe more you do it, the easier it gets.
