[ESP|ENG] Pabellón criollo sin tajadas | Creole pavilion without slices

Buenas buenas 💙 este domingo quiero compartir una receta de nuestro plato típico, existen muchas maneras de prepararlos según cada región lo importante es que siempre están presentes los carbohidratos, la proteína, granos y tajadas.

Good morning 💙 this Sunday I want to share a recipe of our typical dish, there are many ways to prepare them according to each region the important thing is that carbohydrates, protein, grains and slices are always present. 

En esta oportunidad me faltaron las tajadas porque olvide comprarlas y además el país en el que vivo no son fáciles de encontrar solo venden en lugares específicos, pero no por eso vamos a dejar de deleitarnos con este delicioso plato.

This time I missed the slices because I forgot to buy them and also in the country where I live they are not easy to find, they are only sold in specific places, but that doesn't mean we won't stop enjoying this delicious dish.

Preparación|Preparation

En primer lugar me gusta poner en remojo los granos la noche anterior, para que se ablanden mas rápido y además les cambio el agua para evitar que den tantos gases.

First of all, I like to soak the beans the night before, so that they soften faster and I also change the water to prevent them from giving so much gas. 


Es importante que hagan esta preparación con tiempo porque lleva mucho trabajo pero realmente vale la pena porque es muy rica.

It is important to make this preparation ahead of time because it takes a lot of work but it is really worth it because it is very tasty. 


Procedimiento para las caraotas negras | Procedure for black beans

Cortamos 1 cebolla, un diente de ajo y medio pimentón en cuadrados lo mas chiquito que puedan no tiene que ser perfecto, luego en una sartén colocamos un poco de aceite de oliva y sofreímos, una vez que la cebolla se cristalizo me gusta incorporar un poco del las caraotas que ya se ablandaron para agregar los condimentos, en este caso use, sal, pimienta, ajo, pimentón dulce en polvo y un caldo de verduras o cubito las cantidades son a gusto tienen que ir probando por si necesita rectificar algún sabor.

We cut 1 onion, a clove of garlic and half a bell pepper in squares as small as possible, it does not have to be perfect, then in a pan we put a little olive oil and fry, once the onion is crystallized I like to add a little of the beans that are already softened to add the seasonings, in this case use salt, pepper, garlic, sweet paprika powder and a vegetable broth or cube the amounts are to taste have to go testing in case you need to rectify any flavor.  


Incorporamos lo que teníamos en el sartén a la olla con el resto de las caraotas y dejamos se unan todos los sabores.

Add what we had in the pan to the pot with the rest of the beans and let all the flavors come together.


Para la carne mechada

En primer lugar debemos poner a hervir la carne, una vez que se ablandó la sacamos del agua y en caliente comenzamos a desmechar porque parece mentira pero es mucho mas fácil y rápido, yo siento que cuando se enfría se pone dura y cuesta mas.

First of all we must boil the meat, once it has softened we take it out of the water and when it is hot we begin to shred it because it seems like a lie but it is much easier and faster, I feel that when it cools down it gets hard and it costs more.

Luego corto en una tabla, 1 tomate, medio pimentón. 1 cebolla en cuadraditos pequeñitos que luego vamos a sofreír, así que colocamos un poquito de aceite en la olla y vamos saltear la cebolla y el pimento hasta cristalizar, seguidamente agregamos la carne y mezclamos muy bien todos los ingredientes.

Then I cut on a board, 1 tomato, half a bell pepper. 1 onion in small squares that we are going to fry, so we put a little bit of oil in the pot and sauté the onion and the pepper until it crystallizes, then we add the meat and mix all the ingredients very well. 


Seguidamente agrego el tomate y los condimentos a gusto, sal, pimienta, comino, salsa de soya, y agrego el caldo que me quedó de la carne, dejo cocinar a fuego medio hasta que se reduzca.

Then I add the tomato and seasonings to taste, salt, pepper, cumin, soy sauce, and add the broth that I had left from the meat, let it cook over medium heat until it is reduced. 


Estamos listos para poder degustar una delicioso pabellón con arroz blanco y buen provecho.

We are ready to enjoy a delicious pavilion with white rice and bon appetit.
