Hola les deseo una linda tarde y espero que esten bien. Me llena de emocion porque este es mi primer post en esa comunidad, la cual se ve muy interesante. Espero les guste mi contenido tanto como a mi el de todos ustedes. Hoy decidi compartir mi manera de hacer un sabroso cuajado de pepitona para compartir entre familia y amigos.

I hope you like my content as much as I do all of you. Today I decided to share my way of making a tasty pepitona curd to share with family and friends.

Ingredientes:
• 1 kg de pepitona
• 7 ramitas de cebollín
• ¼ kilo de ají
• 3 ramitas de perejil
• 1 cabeza de ajo pequeña
• 1 cucharada de orégano molido
• 1 cucharadita de onoto
• 1 cucharadita de sal

Ingredients:
• 1 kg of pepitone
• 7 sprigs of chives
• ¼ kilo of chili pepper
• 3 sprigs of parsley
• 1 small garlic head
• 1 tablespoon of ground oregano
• 1 teaspoon of onoto
• 1 teaspoon salt

Se comienza limpiando y lavando las pepitonas con agua, vinagre o limón y se escurren. Luego se cortan las pepitonas en trozos pequeños. Posteriormente se pican en cuadritos los aliños (cebollín, ají, perejil, ajo).

You start by cleaning and washing the nuggets with water, vinegar or lemon and drain. Then the pepitones are cut into small pieces. Subsequently, the dressings (chives, chili, parsley, garlic) are diced.

En un sartén se echan los aliños y se van agregando los condimentos (orégano, onoto, sal) para así sofreírlos. Se echan las pepitonas previamente picadas, se mezclan, se tapan y se dejan cocinar hasta que seque la preparación.

In a frying pan, add the seasonings and add the seasonings (oregano, onoto, salt) to fry them. The previously chopped pepitones are added, mixed, covered and left to cook until the preparation dries.

En un bowl se baten las claras de huevo a punto de nieve y luego se colocan las ñemas para así seguir batiendo en formas envolvente. Con ayuda de una cuchara de madera se mezcla el huevo con la preparación de las pepitonas. En un sartén pequeño previamente calentando con un poco de aceite se echa la mezcla para así formar la tortilla.

In a bowl, beat the egg whites until stiff and then place the ñemas to continue beating in enveloping forms. With the help of a wooden spoon, mix the egg with the preparation of the nuggets. In a small pan, previously heating with a little oil, add the mixture to form the tortilla.

Cuando la tortilla se cocina de un lado, con ayuda de un plato procedemos a voltearla para que se cocine del otro lado, se tapa y se deja cocinar hasta su respectiva cocción.

When the omelette is cooked on one side, with the help of a plate we proceed to turn it over so that it cooks on the other side, cover it and let it cook until it is cooked.
