Adobo-style Vegetarian Sisig Dish - 2022

I miss doing my food related posts. It's been a while since I've posted some of my creations due to other activities even if I do cook everyday.

It was pantry-clearing time so I thought that this was a good time to cook, enjoy, and share one of my favorite dishes: Adobo. And not just the regular #vegetarian adobo, I thought about doing something of a crossover between adobo and sisig, which I both love to eat.

For today's #plant-based dish, I've prepared adobo-stye tofu sisig, which is just tofu sisig stir-fried in coconut oil, then stewed in vinegar, soy sauce, bay leaves, pepper corn, and a few other flavors and ingredients that I put in.

Ingredients

Here are the ingredients that I pulled out from the refrigerator and the pantry box: 4 small blocks of tofu, 1 small radish, 1 medium potato, bay leaves, 1 small can of green peas, 50 grams of string beans, 1 medium sized egg, a 5 tablespoons of coconut oil, soy sauce, vinegar, spices and salt and pepper.

Cooking

  1. Wash and cut the ingredients into small cubes, around 0.5 to 0.75 cm.
  2. Stir-fry the tofu until golden brown, add in a dash of salt and pepper, then set aside.
  3. Stir-fry the string beans, radish, and potato until soft - around 5 minutes or so.
  4. Add in the green peas and some salt and pepper for flavor. Stir-fry for a few more minutes.
  5. Add in the tofu set aside earlier, put 1/2 teaspoon of brown sugar and drop in 2-3 pieces of bay leaves; stir-fry some more. At this point you can add some more oil if the ingredients had absorbed all of it already.
  6. Add in a dash of cayenne pepper, cumin, and curry powder for that additional kick of spicy flavor.
  7. Pour in 3 tablespoons of vinegar, 3 tablespoons of soy sauce, 1 teaspoon of mushroom powder, and adjust the fire to low; cover for around three minutes.
  8. At this point, check if all of the ingredients are cooked already and adjust according to your taste.
  9. Crack an egg and put on top.
  10. Mix in the egg before serving. Share and enjoy!

Add some tomatoes and cucumbers on your plate and serve with steaming hot rice!

I have been thinking of a recipe for the tofu I have left. I used half of the tofu block to cook sweet and sour tofu yesterday. Gonna try this, definitely. Thank you for the recipe!
