This is a dish a learnt from my mom. We use nigerian spinach in making it. We call the vegetable 'Efo' in my language.

Maggi
Tomatoes
Pepper
Fish
Salt
Caryfish
Palm oil

- So first you rinse the vegetable with cool water, then start chopping
- When i was done chopping i kept it aside. A lot of livestock can be used for this dish. Meat, fish( fresh, dried or smoked) it depends on which suits you more. I used fish. I washed my fish and steamed it. I spiced it with pepper, caryfish, salt and a cube of maggi.
- After it was steamed, I fried it. I always prefer them fried.
I placed my pot on the gas stove and pour in my palm oil . i allow to heat before pouring in my onions. I stir for a bit before adding tomatoes.
I stir and watch until the tomatoes are no longer fresh and are abit fried. i pour very little water.
- At this point, i pour my pepper, maggi, salt, fried fish and caryfish and stir.
I heat for about 5 minutes before adding my spinach.
- I heat for about 1 minute and my dish is ready. This stew can be served along side rice, yam etc.
I had mine with white rice. Try it.
