Today I bring you a delicious soup or sancocho de mondongo, this is a Venezuelan dish It is characterized by a thick broth prepared from beef belly, accompanied with dressings and vegetables with a touch of salt and sugar that makes this dish something very special in my country. This is known in other countries by different names. Similarly, it is made in a different way depending on each region and country.
This substantial Venezuelan tripe soup that this time I share with you, is one of the most cooked lunches on a family Sunday.
Ingredientes:
• 1 kg de panza.
• 300 gr de auyama.
• 300 gr de yuca.
• 300 gr ocumo chino.
• 300 gr ocumo blanco.
• 200 gr de apio.
• 100gr de cebolla.
• 100 gr de ají dulce.
• 150 gr chin bombón.
• 2 mazorcas.
• 1 zanahoria pequeña.
• 1 plátano.
• 2 cucharadas de color u onoto.
• 2 cucharadas de orégano.
• 1 caldo Maggie.
• 3 cucharadas de azúcar.
• Una taza de harina pan.
• 100 gr de cilantro.
• 5 dientes de ajo
• 100 gr perejil.
• 1 cuchara de aceite.
Ingredients:
1 kg of belly.
• 300 gr of pumpkin.
• 300 gr of cassava.
• 300 gr Chinese occupation.
• 300 gr white ocher.
• 200 gr of celery.
• 100 gr of onion.
• 100 gr of sweet pepper.
• 150 gr chin chocolate.
• 2 ears.
• 1 small carrot.
• 1 banana.
• 2 tablespoons of color or onoto.
• 2 tablespoons of oregano.
• 1 Maggie broth.
• 3 spoonfuls of sugar.
• A cup of bread flour.
• 100 gr of coriander.
• 5 cloves of garlic
• 100 gr parsley.
• 1 tablespoon of oil.

We wash the belly very well, then dice it.

Peel the five garlic cloves, then wash and dice the sweet pepper, carrot, zucchini, onion, coriander, parsley, and chimbombo into small squares.

Place in a pot or cauldron over a low heat, then add the spoon of oil with the five cloves of garlic and let it fry, in the same way we add the dressings, the minced belly, Maggie broth, the anoto or color, the or regano, we add a glass of water and mix it for 2 min, then we proceed to cover it and let it boil for 40 min until it softens.

Once the belly is cooked, add the chimbombo vegetable, the cob or jojoto) the salt and sugar to taste then mix, we precede add four (4) liters of water until boiling over medium heat, once boiled we take it out in a container or container a portion of broth, let the heat rest a little and proceed to add the bread flour, mixing little by little, then we add it to our soup, mix until a little consistency is achieved, let it boil for 5 min, then we turn off the heat and that's it, to serve hot and enjoy the dish.
