Hello Hivers!! I'm back again with another blog. Today I'm going to share with you how I made noodles from scratch and cooked them in our school. This is one of our laboratories in specialty cuisine.
Our instructor told us that we should choose and search for any noodle recipe from Southeast Asia. So I search and visit any websites, finding any easy and not so many recipes because some of the ingredients are not here in the Philippines. I did choose the Shanghai fried noodles, but I didn't include some of the ingredients because I couldn't find them, and some of the ingredients are the ones who find an alternative to them.
So first, I prepare all the ingredients and do the mise en place. So that when we start doing it, it's easy for me to cook it. My cooking operation will be fast and smooth.
So my ingredients for making noodles are:
2 cups (250 g) of all purpose flour
1/4 tsp. (1.5g) of fine sea salt
1/2 cup (120ml) water
Ingredients for cooking the shanghai stir fried noodles are:
2-3 pieces of Pork chop
1 tbsp Soy sauce
1.5 tbsp Dark soy sauce
1.5 tbsp Oyster sauce
1/2 tbspSugar
1 tbsp Cornstarch
1/4 cup Water
Oil
1 cup chopped Cabbage
4 Shiitake mushrooms
1 White onion
1 tsp White pepper
Green onions
2-3 cloves Garlic
Vinegar
I first make the noodles because it has a lot of time to prepare. Making noodles is easy, but kneading the dough takes a lot of time. You will really put a lot of effort into it to knead easily.
My hands are so tired and aching from kneading it, but don't worry; I didn't have any sweats at that time; it's just that it was so tiring to do it. If you notice that your dough is still hard, little by little, just put small amounts of water into it until your dough is smooth and soft. Like a stress ball for your reference, that's how soft and bouncy your dough should be.
After that, you need to rest it for a couple of minutes and wrap it in cling wrap so that there's no air filled in it. While I wait for it, on the other hand, I prepare my sauce and chop the other ingredients.
Making the sauce
Before I forget, I'll tell you how to make the sauce and marinate the pork. First is to put the pork in a bowl, seasoning it with soy sauce, vinegar, white pepper, and cornstarch. Mix it all together. Next is the sauce; in a bowl, add soy sauce, dark soy sauce, oyster sauce, sugar, cornstarch, and some water.
When the dough is ready, I flatten it and cut it into small pieces, forming a noodle strip.
After that, I boil some water first, and when it's boiling, you can put in your noodles for like 2 mins, or it depends if you notice it's soft already. Don't boil it much so it won't get soggy. After that, strain it, wash it with cold water, and set it aside. Cover it so that there's no air coming to it.
Next, I prepare and cook the other ingredients. I heated some oil, added the garlic and pork chop, added the cabbage, shiitake mushrooms, and onions, and mixed it first. Next is to add the noodles and sauce. Mix it and don't overcook it because the noodles are soft already. After that, garnish it with green onion.
When the noodles are ready, I put them on my plate and garnish them with some green onions. Serve it to our instructor and done!
I put a lot of effort into it, knowing I didn't know much about cooking it because it's my first time, but then I'm proud of myself because I did it and have a mouthwatering noodle taste that I didn't expect to be on its right taste.
I'm happy that the feedback from our instructor is good, and she told me it was tasty and there are some minor adjustments to be applied for me to make it perfect.
This experience was so nice and wholesome. I did learn a lot from it. I'm so happy also that my blockmates are there to help me when I need someone to assist me.
