I’m always looking to improve every dish. I did the same here by adding thyme, garlic and cheese to a traditional biscuit recipe.
Ingredients
2 cups self rising flour (plus more for dusting)
1/2 teaspoon kosher salt
1 teaspoon brown sugar
3 tablespoons unsalted butter, chilled
3 tablespoons shortening
1/2 cup shredded cheddar cheese
1/4 teaspoon chopped fresh garlic
1 teaspoon fresh thyme, chopped
3/4 cup buttermilk
Instructions
Pre-heat oven to 450ºf
In a medium mixing bowl combine flour, sugar and salt.
Cut in butter and shortening with pastry blender or using hands until the flour/fat mixture resembles course crumbs. Work quickly so the butter does not melt.
Add cheese, garlic and thyme.
Add buttermilk as needed and mix with wooden spoon until dough comes together and pulls away from the side of the bowl.
Turn dough onto lightly floured surface and roll out to 1/4-1/2 inch thickness.
Using 1-2 inches cookie cutter, cut out biscuits making sure not to twist the cookie cutter. Just a straight down and up motion. Dip cutter in flour as needed
Place biscuits on a lightly greased cookie tray in middle rack and bake for 12-15 minutes or until golden brown.
Brush with melted butter and serve warm.
