Ginger garlic paste 1 tsp
Turmeric powder 1 tsp
Cumin and coriander powder 1/2 tsp

First, I cut the eggplants into medium-sized pieces and cut them into thin long slices. Once the eggplant is cut, wash it with clean water and take it on a plate

When the brinjals are cut lengthwise, then add half spoon of turmeric powder and taste. Once the paste is done, leave it like this for ten minutes

After 10 minutes, add 10 spoons of soybean oil to a pan on the stove. When the oil is hot, fry the eggplant pieces one by one in a pan on medium flame. If one side is fried, I will flip the other side

I will take the eggplant red from the pan and put it on the plate

Then after frying the eggplant in a pan, I will pour the remaining oil. I will fry the chopped onion in medium heat of the stove with the chopped onion and green pepper pieces. When the chopped onion turns light brown in color, then add the ginger garlic paste and fry it well. When the ginger and garlic are fried, then I add all the spice powders one by one. Turmeric powder cumin powder salt to taste

When all the masalas are added, now with the help of a spoon, I stir the masalas and fry them for a while and add a cup of water. After adding the water, when the masalas are grated for a while, I add the fried brinjal to the bones.

If brinjal is given in the pot, I will roast the brinjal on low heat of the stove so that it does not break. I will turn off the oven when it is roasted
