Good evening friends... Today, we will enjoy an exquisite "carrot cake with raisins and ginger". This dessert is one of my favorites, I love its wonderful spongy and a little moist contrast... Let's put on the apron!
Buenas noches amigos... Hoy, disfrutaremos de un exquisito "bizcocho de zanahoria con pasas y jengibre". Éste postre es uno de mis predilectos, me encanta su maravilloso contraste esponjoso y un poco húmedo... Pongámonos el delantal!
- We will start by adding 3 eggs to a bowl, beat at "high" speed, until we get a foamy texture (2 minutes). Then add 2 cups of sugar, for this recipe I used brown sugar, because it gives a "unique and special" flavor. Beat for 6-8 minutes or until smooth.
- Empezaremos agregando a un bowl 3 huevos, batimos a velocidad "alta", hasta conseguir una textura espumosa (2 minutos). Enseguida añadimos 2 tazas de azúcar, para realizar ésta receta utilicé azúcar morena, ya que aporta un sabor "único y especial". Batimos durante 6-8 minutos o hasta conseguir una mezcla sin grumos.

- Add 1 tablespoon of vanilla essence, together with 1/2 teaspoon of almond essence...

- Next, we integrate 2 cups of wheat flour, along with 2 teaspoons of baking powder and 1 heaping teaspoon of powdered ginger. Interspersing with 1/2 cup of milk.
- A continuación, integramos 2 tazas de harina de trigo, junto con 2 cucharaditas de polvo de hornear y 1 cucharadita colmada de jengibre en polvo. Iremos intercalando con 1/2 taza de leche.

- Add our colorful carrots, I suggest grating them on the "thick" side. To make this recipe I used 2 large carrots.
- Añadimos nuestra colorida zanahoria, les sugiero rallar por el lado "grueso". Para realizar ésta receta utilicé 2 zanahorias grandes.

- Bake at 180º for 45 minutes or until it is ready.
- Horneamos a 180º durante 45 minutos o hasta comprobar que está listo.
