As Philippines was Colonized by Spain, Adobo was derived from the Spanish word βadobarβ which means to marinate. This can be a liquid marinade or to rub using powder ingredients.
The Filipino Adobo version is somewhat like marinating the pork in soy sauce and crushed garlic, vinegar can also be add some marinade ingredient. Otherwise in Mexican adobo, they make use of chilies, garlic, cinnamon, and oregano as marinade.
Both dishes look and taste very different.
In the Philippines every region have their own pork adobo version.
One Basic Pork Adobo version is what I will cook for todays blog, so let's start and do it together.
- Wash your pork and boil it to tender, when it is already tenderize, remove the pork and set aside your broth for later use.
- Slice one Onion head and 10 cloves of garlic or more.
- Put oil on the pan and sautΓ© both sliced garlic and onion until caramelized.
- Add black pepper powder so that the taste will incorporate to the oil.
- Add your pork and cooked it until brownish color.
- As your pork turned slightly brown, add 2 long chopped chilies to give a little bit taste of spice.
- Continue to stir fry until cooked and mixed well.
- Now pour the broth to the pork and bring it to boil.
- After liquid is reduced, put your soy sauce, and vinegar and simmer it to boil. (1 cup soy sauce and 1/2 cup vinegar).
- - (OPTIONAL)as sauce is reducing put bay leaves and few pepper corns, 1/2 spoon sugar to balance the taste.
- Now our recipe is ready.
- Transfer it to the serving plate and served it best with white rice.
