Kare-kare is a Filipino meaty stew in a thick peanut sauce. usually made with oxtail, meat knuckles and mix of different cuts of pork or beef. This stew goes so well with sautéed shrimp paste, but don't forget to have a steamed rice.
𝐼𝒩𝒢𝑅𝐸𝒟𝐼𝐸𝒩𝒯𝒮
- Meat (Pork or Beef)
- Onion and garlic
- Veggies (Pechay,String beans and Eggplant)
- Peanut Butter (Originally used is grind peanuts)
- Cooking oil
- Fish sauce
- achuete (for color)
𝒮𝒯𝐸𝒫𝒮 𝐼𝒩 𝒞𝒪𝒪𝒦𝐼𝒩𝒢
Step 1
Heat oil in a pan on a medium heat. Add the onion and garlic and cook, until soft.
Step 2
Add the meat and cook, until browned and put water to boil to make it tender.
Step 3
Add fish sauce to add taste, again bring to boil and reduce heat to low and let it boil for 1 1/2 hours or until the meat is tender.
Step 4
In a separate pot bring to boil your eggplant and string beans then set aside. same as on the Pechay.
Step 5
Add in achuete powder, for food color. Add peanut butter to it and stir until well combined. Stir occasionally until desired consistency is achieved.
Step 6
Place it on a serving plate and top it with veggies and shrimp paste.
