Binagoongan Baboy or Pork in Shrimp Paste is a Filipino Pork dish and the name was derived literally from its main ingredients which are pork and shrimp paste or "Bagoong". Bagoong alamang are small shrimp usually found in Asia, and it is fermented to be used as condiments, it will last for 1-3 months and maybe longer if cooked and refrigerated.

Binagoongan baboy has several versions depending on what you like most, I usually have this for lunch β€” versions like with hot chili peppers, also have the sweet and salty version. This binagoongan baboy recipe I will make is a simple non-spicy version. I added eggplants to add a different flavor.

In this recipe, I used the ready-to-eat-shrimp paste in the bottle, which is we can easily purchase from grocery stores.

Binagoongan Baboy Recipe (Pork in Shrimp Paste)
Preparation time for cooking is around 1 hour and 30 minutes

Ingredients

  • pork belly cut into small cubes
  • shrimp paste cooked
  • medium plum tomatoes diced
  • large onion diced
  • minced garlic
  • beef broth
  • Chinese eggplant sliced ( two ways of cooking Pan-fry or not) in this recipe I tried not to pan-fry it to be more oil-free.
  • ground black pepper
  • sugar
  • vinegar
  • cooking oil

Instructions

Heat the oil in a cooking pot. add the garlic and onion. Saute for 5 minutes or until both onions are caramelized. Add the pork slices. Cook until the color of the pork turns light brown. Some other cooking recipes put the tomatoes first before the pork but it is best to cook the pork before the tomatoes, it will give you a much better brown color and the juice that comes out from the tomatoes will infuse into the pork to make it more savory. Pour in the beef broth. Let it boil. Cover and simmer for 45 to 60 minutes or until the pork is tender.

Add the shrimp paste. Stir and cook in low to medium heat for 3 to 5 minutes. add vinegar to balance the taste and let it simmer. Season your binagoongan with sugar and ground black pepper.

We will not be adding salt to this dish because the shrimp paste is already salty, to begin with, and top it with green long chilies, and boil until the oil will come out.

Transfer to a serving plate.

Pork Binagoongan is best eaten for lunch and no problem for breakfast and dinner. Serve it with warm white rice. Enjoy eating.
