I've been trying to take more pictures of the dinners and meals that I've been preparing and eating. Everybody like seeing pictures of food right? So lets get into it. These are meals that I've eaten over the last few months.
The first meal to show is chicken thighs served with roasted carrots, zucchini and mashed potatoes with gravy. The gravy was definitly leftover from a previous meal. I know this because I would never take the time to make gravy for a meal like this.
The next meal is ribs served with zucchini and a garden salad. This would be something that I'd make on a weekend. Ribs take a few hours to slow cook so it's something that I make regularly on Saturday or Sunday, pretty much anytime the ribs go on sale at the grocery store.
Another meal that has become a staple for weekends is pulled pork. Collar butt had been on sale for a while at the store so we stocked up, cut them into two person portions and froze them for future. Its another meal that takes a couple of hours or more so every few weeks we have pulled pork on a Sunday. I served it with Asian inspired Brussel sprouts and potatoes with fried onions on top. Fried onions are a guilty pleasure for me. I eat them way too often, always on potatoes. It's like BBQ, another style of food that I eat way too often.
You see? Next is another meal served with potatoes with fried onions on top. This meal was a mishmash mash of a lot of different things, chicken thighs, roasted broccoli and carrots (probably leftovers) and sauted yellow peppers.
I should mention that every meal, everyday without fail, I make a salad much like this one. It's typically served in a bowl though. I typically put grape tomatoes in it with sundried tomatoes, cucumber and anchovies. I'm on an anchovies and sundried tomato kick right now.
There are times we eat a salad as the full meal. Generally it's when we are running out of meat for the week and have to do groceries again. I often add protein to it in the form of hard boiled eggs and maybe cut bacon.
I don't put a lot of effort into my lunches on weekends. I'll often just eat canned sardines and vegetables. Sardines are good if you buy decent quality ones. The cheaper varieties are too fishy tasting for me, but I found a brand that I enjoy, so I eat them probably once a week.
Next we have pork tenderloin served with Brussel sprouts and sauted carrots again. Most of these dishes are very basic, as you can see - a protein with vegetables and sometimes a starch (i.e. potatoes).
For the Brussel sprouts I typically steam them (without additional liquid) just for a few minutes in a large shallow sauce pan to partially cook them. Then I take off the lid and continue to cook them with a little oil just to sear them. I often add hoisin sauce afterwards and maybe some soya sauce and sesame seeds for garnish.
Next is ribs with roasted sweet potato and carrots. It's a very orange meal.
Next is another winter staple, Beef bourguignon or beef stew. I make it a lot.
Similarly on the other end of the stew spectrum, I recently made a chicken thigh version of coq au vin. It was decent.
Lastly just because I like the photo, here are some potato wedges that I roasted in a cast iron skillet in the oven.

The pulled pork was more southern BBQ with Asian style Brussel sprouts for me. But are you saying that there is an Asian style pulled porknout there? I'm intrigued 🤔 👀
Lol, no. I was talking shit and getting confused. I meant with the sprouts. I always have my pulled pork in a Mexican'y style!

I try to eat healthy. We rarely eat prepackaged meals. More work but it's worth it to me

Brussel sprouts are in the same family as cabbage so they probably are very similar. Those look the same but not as tightly packed together 😂
Yeah the baby cabbage here looks fluffy 🤣 but I think the taste is similar ehehe

Yeah I like pork tenderloin as well. We haven't been eating it much lately but used to a lot.
