I love chocolate! Especially dark chocolate. Over the Winter I've been stewing bananas in a light chocolate sauce. It's a delicious warm treat for a cold Winter's night.
Then, I came across a recipe that takes it to another level.
It starts of similarly, but instead of stewing, add some oil to the pan, sugar, let it caramelize a bit, then add the bananas and let them cook with with a lid. Perhaps throw a dash of water in also to help them cook.
The riper the bananas the better. These in the photo are still a bit too green for my liking. The older they are, the sweeter they are.
Next mix up the chocolate batter, flour, baking powder, a pinch of salt, be generous with the coco powder. Sweeten it to your liking. Mix, add an egg and some water.
When the bananas are starting to look cooked, add the batter, pouring it over the bananas. Cover it with the lid again. Check it periodically.
While you're waiting for it bake in the pan, it's time to make the hot chocolate sauce.
With a knife, cut a good amount of dark cooking chocolate in shavings. Place this in a pot on a low heat. Add a cream and slowly stir until it is thoroughly melted and mixed.
Then serve your chocolate banana dessert with a generous helping of chocolate sauce over the top.
