Comenzamos realizando la Masa Madre con los siguientes ingredientes:
▶1 1/2 taza de harina de trigo
▶1 1/2 taza de agua
▶1/2 cucharada de levadura
▶1/2 cucharada de sal
We start by making the Sourdough with the following ingredients:
▶ 1 1/2 cup all-purpose flour
▶ 1 1/2 cups of water
▶ 1/2 tablespoon yeast
▶ 1/2 tablespoon salt
Colocamos en un tazón todos estos ingredientes y mezclamos bien.
We put all these ingredients in a bowl and mix well.
Lo tapamos bien y llevamos a reposar por 20 minutos aproximadamente, en un lugar donde no pasen corriente de aire.
We cover it well and let it rest for approximately 20 minutes, in a place where there is no draft.
Luego de reposar nuestra masa se puede observar que ha crecido y tiene muchas burbujas, eso indica que la levadura esta fermentando.
After resting our dough you can see that it has grown and has many bubbles, this indicates that the yeast is fermenting.
Continuamos ahora con los ingredientes de la masa del pan:
▶6 tazas de harina de trigo
▶4 tazas de agua tibia
▶1 1/2 cucharada de levadura
▶1 cucharadita de sal
We now continue with the ingredients of the bread dough:
▶ 6 cups of wheat flour
▶ 4 cups of warm water
▶ 1 1/2 tablespoons yeast
▶ 1 teaspoon salt
Hacemos un volcán con la harina sobre el mesón, agregamos la sal alrededor y en el centro la levadura y la mitad del agua.
We make a volcano with the flour on the counter, add the salt around and in the center the yeast and half the water.
Integramos todos los ingredientes , para luego ir agregando la masa madre, comenzando a amasar. Debemos ir colocando agua tibia poco a poco hasta que se mezcle todo y finalmente quede una mas elástica y suave.
We integrate all the ingredients, and then add the sourdough, starting to knead. We must gradually place warm water until everything is mixed and finally a more elastic and smooth one is left.
Colocamos la masa en un tazón con grasa y la tapamos, para que repose 1 hora aproximadamente.
We place the dough in a bowl with fat and cover it, so that it rests for approximately 1 hour.
Luego de el tiempo de reposo la masa ha duplicado su tamaño.
After the rest time, the dough has doubled in size.
La volcamos en el mesón y con la punta de nuestros dedos la desgacificamos y amasamos un poco.
We dump it on the counter and with the tips of our fingers we degacify it and knead it a little.
Hacemos un rollo y comenzamos a picar en porciones iguales y la colocamos en forma de bolas.
We make a roll and begin to chop in equal portions and place it in the form of balls.
Tomamos cada bola, la aplanamos y comenzamos a enrollar y en las puntas presionamos para que sean mas delgadas. Colocamos nuestros panes en un bandeja engrasada y le hacemos un corte por todo el centro.
We take each ball, flatten it and begin to roll and press the tips to make them thinner. We place our breads on a greased tray and make a cut around the center.
Aquí ya dejamos reposar otra hora tapándolos con un paño. Pero antes lo rociamos con un poquito de agua para mantener la humedad.

Luego de reposar su tamaño se duplica, rociando de nuevo con agua con un aerosol o con los dedos húmedos, los llevamos al horno a 350 grados por 30 minutos aproximadamente.
