Butter cookies is something always appears in Western in Festive season, it is a normal thing but in my hometown, Thanh Hóa, Vietnam, 15-20 year back forward, snack or butter cookies is really special luxury thing.
In my memory, Hải Châu orange biscuits the best one we’ve ever had, which costed 2.500 VND (~0.1$) for 130 gram.
Then “Danisa butter cookies – Danish recipe” was imported, its taste was really nice but cost is too much expensive so it being my whole childhood desire in every Festive season.
When I got my Oven, I spent my first 4 weeks to learn how to make cookies: butter cookies, chocolate chip cookies, almond cookies… From the first batch with all hard as rocks until the day I got all cute shape, light sweet, soft and crispy cookies… it is not about how to make a delicious one, it also taught me about patient and compliance. I had to understand ingredients, followed recipe, did steps by steps to make a good cookie.
One day in Feb, 2020, I found my own butter cookies recipe after testing many from Youtube. It was my biggest happiness at that time. I’ve started made butter cookies basing on that as gifts for my friends and yes, of course, for our snack on Tet holiday.
In this post, I will show you how I made my cute rose and daisy butter cookies on last Sunday night.
1. Ingredients:
. 1 egg (50-55gram)
. 120gram unsalted butter
. 3ml vanilla extract
. 200gram flour (No.11 or No.8)
. 90gram icing sugar
. 10ml jam
2. How to make butter cookies:
Step 1: Leave butter in room temperature until it be soft and mix them until you get lighter color.
Step 2: Sift the icing sugar to get a finer one. Add it into the butter. Use a whisk or handy mixer to mix them well. You will get a finer mixture with lighter color than original butter.
tap! tap! tap!
Step 3: Beat the egg slightly then pour into the mixture, add more 3ml vanilla extract.
Use hand mixer, again, to not let your arm be pain. haha
Step 4: Use flour-sifter to sift our flour.
Separate it as 2 parts then add part by part the the mixture in step 3.
Use spatula with “fold skill” or whisk… whatever you can do to let them to be a nice dough as my picture:
Step 5. Now is the time to make rose and daisy butter cookies!
Use 2 piping bags: one to hold the dough, one to hold the wilton tip 2D. Put dough into the first bag, cut its top to let dough goes out when you press the bag. Then use the other to cover outside.
2 bags will help you make the cookies easier because it will not be crack or tear when you press many times.
Put parchment on the tray, you can use a little dough to stick them together, no more movement.
Move the tip as 2 circles, start from inner forward, you will get the rose.
Keep the tip straight as 90°C compare with the tray, 2cm above and press to let the dough out.
When the dough is touch the parchment, keep pressing but also lower your tip. Stop and remove the tip, you will see a hole in the center of the daisy.
Use jam and put into the hole to make pistil part.
Step 6: Pre-heat the oven in 200°C in 10 mins then bake cookies in 5mins first.
After that, lower the heat to 170°C and bake in 8mins until you see the golden brown color in cookie edge.
Roses after 13mins
Daisy after 5mins...
...After 13mins...
Take cookies out of the oven when it finish. Put them on the baking rack until it cool.
Keep your cute roses and daisies in the airtight container and in refrigerator for better taste.
My room was overwhelmed by butter and sugar smell from the 10th min when baking cookies. It is really nice feeling. Also, whenever I got any depress, do follow steps by steps to bake these things will help me be relax and forget my negative thinking.
I can finish all these sweet and crispy cookies in 20mins and later, will feel regret because I did not make more or about my weight problem. haha
Hope you can make nicer cookies and please share yours to discuss more about this delicious snack!
Have a nice day~
