When Qurator's: Hive Top Chef! | Cheesecake, showed up in my feed, there was no way I was going to miss out on making my absolute favourite teatime or dessert treat.
Cheesecake with a Strawberry Coulis and fresh Berries topping for morning tea, and again for dessert tonight, sounds like pure indulgence!
I'm not generally fond of traditional baked cheesecakes, as the flavour changes when baked, and the texture is not as fluffy as I like.
This cheesecake however is only baked for 10 minutes, no longer, so keeps its fluffy texture!
I veered off from the original recipe I've used for many moons. The original recipe calls for full-cream smooth cottage cheese and UHT Cream; I used fat-free cottage cheese and fresh cream.
One fat-free ingredient in cheesecake will make hardly any difference in the fat content, but I grabbed the wrong tub of cottage cheese and only realized it when I got to the till! The store did not have any UHT cream, so I bought fresh cream!
I was a tad concerned as the friend who gave me this recipe many moons ago, emphasized that UHT cream had to be used. In hindsight, I must admit that she was right, UHT cream makes the filling ultra creamy, but it still was creamy and very good!
We have a glut of Strawberries and Blueberries at the moment, so I topped the cheesecake with a super-quick Strawberry Coulis, and fresh Strawberries and Blueberries.
(っ◔◡◔)っ ♥ Strawberry & Blueberry Cheesecake Recipe ♥
𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
- 100 gram melted Butter
- 1 packet Tennis biscuits, (classic coconut biscuits), crushed
- 1 tub full-cream smooth Cottage Cheese I used fat-free
- 1 can of sweetened Condensed Milk
- Zest & juice of 1 Lemon
- 250ml cooled UHT Cream, whipped till stiff peaks form I used fresh Cream
Place biscuits in a jiffy bag and crush with a rolling pin till fine.
Mix butter and biscuit crumbs, and press into a lined springform pan.
Mix cottage cheese, condensed milk, lemon juice, and zest, till smooth.
Fold in the whipped cream and spoon over biscuit base, smooth top.
Bake at 160°C for 10 minutes only.
𝙎𝙩𝙚𝙥-𝙗𝙮-𝙨𝙩𝙚𝙥 𝙄𝙢𝙖𝙜𝙚𝙨
Strawberry Coulis
- 400ml diced Strawberries
- 100ml Sugar
- 2ml Vanilla
Simmer till the coulis thickens, set aside to cool a little, then spoon over baked cheesecake.
Refrigerate overnight, then carefully remove from the springform pan the following day.
Top with strawberries and blueberries.

I love this one, but unfortunately, berries are sooo expensive in my country, so I prefer to buy it at a cake store. :)

I don't know what UHT cream is. That looks like a pretty easy cheesecake compared to some recipes I've read. I really love cheesecake, but they don't make good ones here for the most part. I think they put in gelatin or something, so they're more like mousse, fluffy. I like a thick NY cheesecake! There are two local places I've just learned have good ones, so I'll be visiting them more often (one I had at a friend's birthday party and it had passionfruit on the top - so yummy). Cottage cheese isn't available anywhere in our town, so I'll have to figure out a substitute if I want to make it. I'm glad you entered. I love seeing your recipe posts!
