Lizzie's Crispy Banana Fritters

Crispy on the outside, with a dusting of Cinnamon Sugar, deliciously spongy inside, and a delicate fresh Banana flavour coming through!

I'm talking Banana Fritters of course!
This super-quick teatime treat, made with basic pantry staples and a single Banana, can be turned into an indulgent dessert when served with creamy Ice Cream, or thick and creamy Yogurt, and a sprinkling of Berries.

After the stressful first three weeks of October, I needed something to sweeten the day. I had one perfectly ripe Banana, and immediately thought - Banana Fritters!

I used to make these little balls of pure delight when my sons were small. Hubby as a Type 1 diabetic (from the age of eight), could also indulge. I omitted the sugar in the batter - the banana gives it quite enough sweetness, and his fritters weren't given a dusting of cinnamon sugar, only a light sprinkling of Cinnamon. I sometimes used granulated artificial sweetener, but of course, it's not healthy, so did not do that often.

Banana Fritters

This quantity makes 1 dozen fritters, I squeezed out one extra!

Ingredients

Flour, Baking Powder, Sugar, Salt, Vanilla Essence, Cinnamon Sugar and a Banana of course!

Recipe
  • 1 Egg
  • 15ml Castor Sugar
  • 5ml Vanilla Essence
  • 1 Banana, mashed with a fork
  • 250ml Cake Flour
  • 10ml Baking Powder
  • 2ml Salt
  • 15ml Yogurt
  • Approx 100ml Cinnamon Sugar
The How-to

Beat egg with an electric beater, add sugar and vanilla, and beat till light and frothy.

Add mashed banana and beat till incorporated into egg mixture - do not overbeat!

Gradually add sifted dry ingredients, folding in with a whisk

My dough became too thick and heavy, so I decided to add a little yogurt - not necessary when using a larger banana

Dough now is the right consistency, not too heavy

Drop spoonsful of batter into deep hot oil, on medium heat

The little balls of dough puff up beautifully, some of them magically turn themselves, but use two forks to turn until they're a nice golden brown
Drain on paper towel before rolling into cinnamon sugar

Not oily at all as can be seen in the sponge inside. The dough was just the right consistency, and the oil was nice and hot, obviously not smoking hot;)

Voila! Time for tea, or dessert with yogurt and berries, or creamy Vanilla & Strawberry Ice Cream!

Oh these look divine, @lizelle. I'm seriously considering giving these a try especially if the recipe isn't heavy on the sugar and can go without. They seem mouth-watering.

They are very good, you don't need to add sugar to the batter, there's enough in the banana, And don't be naughty like me, coating with way too much sugar;)

I went on a joy ride down to Umdoni, and took my school friend to have a look at the village.

I also made it yesterday. So, I know your banana cake become testy. But I am not use egg, baking soda. Next time I will try it.

You definitely need soda and eggs, it needs those rising agents. If you're vegan you can use an egg replacement like chia seeds.

These look delicious! I never fry stuff and I just wouldn’t know what to do with the used oil. Sounds yummy! Thanks for sharing the recipe.

I don't like deep-frying, did so for the blog, but you can shallow fry them like crumpets/flapjacks/pancakes instead of round balls. I strain the oil and will use it again, obviously only once or twice, not good reheating oil as they do in fast-food places!
They were very good and the oil did not penetrate the dough.

I love banana fritters, but the one we used here in Asia is Plantain. It's starchy and a less sweeter version.

The mix of cinnamon and sugar sounds more than enough to make it taste really good 😊 👍
