What a treasure of a blog you've written here with such detailed info on how to prepare this! We have what we call the annual "Sardine Run" here on the east coast of South Africa, quite a spectacle! The boats go out to net them and people often buy it by the crate and it's not expensive at all.
We buy just enough for about 2 meals; I marinade it in Lemon juice and herbs and then coat it in seasoned flour and lastly dip it in a beaten egg and fry it in shallow oil, absolutely delicious!
Anchovies are really expensive here but I'm keen to try your method next year in July when the sardines come close to our shores again.
