It only took one spoonful of this creamy and delectable Butternut Squash Soup, to get me hooked.
The velvety texture and full flavour surely took some time and skill with the cooking pots!
I was so wrong!
My closest work buddy and I often shared leftovers for lunch in the office, and she introduced me to Butternut Soup.
I was skeptical when I saw the simple ingredients in her recipe; how could that produce such a luscious soup?
The velvety texture made me believe it contained fresh cream, but the recipe said otherwise.
I wondered if she'd left out her 'secret' ingredient, but, my friend would never do that to me;)
My older brother is in remission after undergoing intensive radiation treatment for throat cancer, but it left a hole between his windpipe and his esophagus (food pipe). The hole is too large to repair, and he's not willing to walk around with a PEG pipe.
He can only eat pureed food, smoothies, or soft foods like steamed fish and mashed potatoes with loads of gravy. Eating is a constant struggle, but he's slowly gaining weight.
He loves Butternut Soup, so I made a batch to take with when we went down the coast last week. Of course enough for my friends and me as well, at least for just one of our meals.
The verdict - the best Butternut Soup everyone's tasted so far!
Simple ingredients and the only liquid added is milk and water; yep, no cream!
The recipe can easily be changed to cater for Vegans
The recipe - Velvety Butternut Soup
- 125 gram Butter or Plant-based Margarine
- 2 Onions - diced
- 5ml Curry Powder - I omitted this, and added Turmeric as an afterthought. Hot spice is a no-no for my brother
- 2 large Butternuts - peeled and cubed
- 1 large Granny Smith Apple - peeled and cubed
- 1 piece Nutmeg or 2ml powdered Nutmeg
- 60ml Cake Wheat Flour
- 2 Chicken or Vegetable Stock pots or cubes
- 750ml Boiling Water
- 500ml Milk - Coconut Milk for the Vegan version
- 5ml Salt
Sautee Onions in Butter till they start to caramelize, and add spice
Add Butternut, Apples, Nutmeg, and Flour, and 'stir-fry'
Dissolve stock pots or cubes in the boiling water, and add salt
Add liquids to the vegetables, and cook till Butternut is soft
Puree in a blender till the mixture is smooth and creamy
Serve with a swirl of cream - coconut cream for a Vegan version, and tuck in
Delicious served with hot Sourdough Rolls or Garlic Naan bread

This sounds absolutely wonderful! 😋
It's super delicious @thekittygirl. I have more butternut squash waiting to be transformed into soup😉
I love butternut squash and this sounds too tasty to pass up. I can imagine dipping some sour dough bread in it 😋 A fall test here (September- November)for me perhaps, book marked 😁
You won't be sorry, it's really good! We're in the middle of winter here in SA, but live on the coast in a subtropical climate, so our winters are mild, but still cold.
As soon as I get some fresh harvested vegetables I'm planning on making a few soups and freeze them than enjoy when it's cold or at least cooler 😊 I want to try out a sweet potato soup as well. Garden soups 😋
Me too... Love butternut squash soup
It's a great vegetable and I just remembered someone else who's favorite vegetable is squash. @cup-bearer would you make this?
Oh. I would love to try this recipe at home. I guess my kids would like to try this one too.
It's super simple and scrumptious!
Aha, I see Butternut soup coming up in wintertime;)
It's super delish, I will be making it more often now!

Repeating what @coolmidwestguy said, I love butternut squash soup, especially in the winter, it's so comforting.
I'm sorry to hear about your brother's condition, hopefully he will find plenty of recipes to suit his diet, and I'm sure with your help, he will.
I'd forgotten about this soup, I usually make thick broths during winter, but my younger brother bought him some heat and eat soups. Their butternut squash soup is good, but nothing beats homemade.
He's very fortunate to have beaten the throat cancer, it was Stage 4 already; could pop up elsewhere? He lives alone which is a concern because of the choking risk. And, still smokes, but won't listen!!!
It looks rich in flavor also in nutrients, looks really creamy too. And with how easy it is to prepare this could be an every soup. I'm just curious how they taste. I mean, I want to have a taste od it myself. Anyways, it good your older brother is gaining weight now, but its too hard for him too for sure. Hope he's super duper better now ✨😊
I also wondered about the taste of butternut soup, but was hooked the first time I had it.
He'll always have the problem swallowing, but is getting stronger, thank you @ruffatotmeee
This soup looks very exquisite. Something different from the different creams I have prepared. Especially for his brother, who can only consume soft foods and creams due to his illness. May your family member get better soon. Greetings.
It truly is exquisite, I actually forgot about this soup. Thank you for the good wishes @marilui91
Oooooo that's a wonderful recipe for fall. I bet it’s even better with some fresh sourdough bread. wow thanks so much dear
I hope you get to make it, simply delicious!
thank you so much for sharing it dear
At one glance they look so rich and creamy. Hope your brother should have enjoyed this recipe. Looks sooo yummy. So should be while tasting.
It does look rich and creamy, yet the ingredients are not rich at all. He enjoyed it very much!
This looks too tasty, hmmm I think if I taste this one so won't want to eat anything else for that day lol
It's very yummy indeed, and filling too!
This looks yummy. I haven't tried it before. But with these steps, I'll try to create my own magic 😊
I hope you do try it, you're sure to enjoy it @iskawrites!
Seems like it is rich in flavour and healthy too
Pumpkin is one of my favorites. This looks like a puree.. yummy 🤤
!PIZZA
It is a delicious creamy puree which I'll make more often now that we're in winter. Thank you for popping in @jane1289

This recipe, I think is good for digestion. By the way, is that salted butter or not?
Oh @lizelle I can just imagine it super delicious 😋. Thanks for sharing the recipe 🤗
oh yum! and where did you get the idea to add the granny smith apple? I haven't seen that before!
That was my friend's recipe, I also thought it strange but tasted her soup before so knew it wasn't a mistake. That's probably what adds to the delicious flavor.
Perfect for a cold Cape evening @clairemobey 🤗
indeed! Sounds like perfection! Just that little tang. I should imagine it adds some magic :)
