Homemade Taro dessert soup.

Greetings foodies,

I hope that everyone is doing well. For today's content, I will share with guys my homemade taro dessert soup. This soup is a very similar dish to Visayan soup commonly known as binignit. What makes it different from it is that I use whole taro freshly harvested from my garden instead of glutinous rice as a main ingredient. For this Taro story, I’ll make a separate content to the right community which I already posted a few way back when I just started planting it.

Anyway, let's get started.

Of course, I first went to the garden to pull my taro. Then I started to prepare all the ingredients I bought from the market.

Ingredients

Taro 1 head purple and half white.
Rice regular 1/8 cup.
Tapioca 1/8 cup.
Pearl 3 packs.
Banana 5 pieces.
Brown sugar 250 grams.
Coconut (matured and grated) for coconut milk.
vanilla exact and a pinch of salt (Which I forget to include in the photo)

Preparation and Cooking procedure

Before preparing the other ingredients I make sure to wash the 1/8 cups rice and tapioca to set them on flame to slowly cook while I’m busy preparing and slicing the remaining ingredients. By the way, the coconut is already prepared and I only add water to extract the coconut milk on that.

Now here are my prepared ingredients finally rice and tapioca were partially cooked so I went on to the grated coconut to get the first extraction set it aside and have the second extraction add on the partially cooked ingredients so I could now set taro for cooking before adding those ingredients that can easily be cooked.

Here’s taro added to the cooked rice and tapioca. Second extracted coconut milk is also added here and I set it to boil.

I also used two casseroles since tapioca sticks on the other one so I transferred it to cook other ingredients without burning the bottom.

The top photo on the left is where the taro started to boil then the photo from the right is already half cooked and soup started to viscous.

Center photos on the left I added the sliced bananas and cooked it for 5 minutes then on the right side I added vanilla extract for aroma then simmered it for 2 minutes.

Lastly, below the photos on the left, I added the first extracted coconut milk and gave a good stir. And on the right where I added the last ingredients which are brown sugar and pearls and I also added a pinch of salt to balance the taste. Then finally I put on medium fire to simmer.

And here’s my delicious homemade taro dessert soup. The color looks so appetizing and my kids just really love the pearls. Unfortunately, I only took two photos after cooking I was already excited about having them, and especially I felt so hungry already so I just didn't bother to take some more.

I've had this dish before and I remember that it has a mix of flavours. I'm not keen on the pearls and would prefer it without sugar.😂
