Let's cook simple Cebuano-style" chicken halang-halang "

Greetings food lovers,

Today let's cook my version of some chicken halang-halang using my homegrown ingredients again.

This recipe was cooked last week before all my chilies got ripened but I just decided to share it with guys maybe you find this recipe unique and maybe it's useful for your newly discovered dish. And because I will include ingredients that I can find around, I started collecting them. I grabbed raw papaya, and lemon basil that will add aroma and flavor to our recipe today, and of course, our main ingredient the chilies which is why it is called in Cebu halang-halang which means Spicy but for this recipe I just add a minimal amount since my kids might want to eat this too.

Here, I'm preparing half of the whole chicken that I defrosted already. Then I prepare the fresh ingredients and slice the chicken meat into cubes.

(Ingredients: chicken, Chilies, green papaya, lemon basil leaves, onion, garlic, ginger, salt, ground black pepper, seasoning, and water.)

Meanwhile, this is how gonna be like before we started the fire we need all the ingredients so we can cook spontaneously.

Usually, when I cook chicken, I simmer it first so that the natural oil comes out because when it is sauteed with oil, our dish will just be more oily.

When the chicken was already brownish and the oils are extracted I just remove them for a moment and saute the spices but if you're Filipino and you are just in a hurry you can just simply add on the spices but for me, I love sauteeing the spices first since it will be more aromatic if I choose to do this way.

Then after sauteeing, we can simply add back the chicken and follow the slice of green papaya and stir.

After that, we can put the chilies. You also have an option here if you want something spicier, you can add more chilies and you can saute them with other spices before this procedure. Since there are children at home who may also like to eat it, so I want to moderate the spiciness in our recipe today.

Then let's add water and bring a boil. And when it started to boil, I seasoned it and also sprinkled the lemon basil leaves on it.

Lastly, just let it simmer for the last time until there is only a little broth left and it's all ready to serve.

In the halang-halang recipe, we also have many ways to cook it because it can also be made with pork. We can also use coconut milk but that day I was too lazy to add coconut because the cooking plan was sudden due to I was very hungry already. Thank you, and your cook is also working hard to plant vegetables in the garden, even if it's a rush suddenly we made an instant dish right away 😁.

But back then, the cooking of halang-halang in my province was just this simple with us, at that time usually only native chicken was used, but now there are more methods of cooking them.
