Village soup
Today I will show you how I make a very tasty kharcho soup from smoked ribs. The soup turns out to be rich and fragrant. In a five-liter pot I put 1.5 kg of smoked ribs pour cold water and turn on medium heat. I close the lid and leave to boil. While the ribs are boiling I cut one onion and grate one carrot and one bell pepper.
Then I melt 50g of butter in a pan and put the onion and fry over low heat. Then add grated carrots, stir them again and fry for another three minutes. Then I add half a teaspoon of salt, 2 teaspoons of seasoning and one teaspoon of well ground black pepper and stir. Next, I add 300 grams of crushed tomatoes in their own juice without the skin. Then four tablespoons of tomato sauce. Then I pour the chopped bell peppers and stir it. I cover with a lid and put on low heat. And in 5 minutes I turn off the heat, and remove the pan from the stove.
Smoked ribs remove from the fire, put them in a bowl and remove the bones, the meat should be free from the bones. Then I return the meat back into the pot and add two bay leaves. I turn on low heat and bring it to the boil. Then I add 150g of well washed rice, stir it and cook on low heat for 10 minutes more. I add a small piece of hot pepper and stir if necessary, add boiling water and salt to taste, and leave to cook on low heat for 10 minutes.
At the end of cooking, I add chopped greens to taste and 3 cloves of garlic grated on a medium grater. Stir and turn off the heat. Then I cover the pot with a lid and take it off the stove and let it stay for 5-10 minutes. I pour the soup on the plates with chopped greens and serve. Bon appetit to all
