For breakfast, how about a delectable and incredibly simple quesadilla?

            All you need
  • 2 frozen ready-made parathas (you can make them or some tortillas on your own as well if you like challenges or aren't lazy like me)
  • 2 eggs
  • chopped onions
  • chopped green chilli
  • chopped coriander
  • mozzarella cheese
  • chopped tomatoes (optional)
  • chopped capsicum (optional)
  • any other veg you like
  • sausage, bacon, mushrooms absolutely whatever you have and like
  • salt, pepper and some chilli flakes if you'd like
  • butter to fry and cook the quesadilla

Except for the cheese, combine all of the ingredients, including the egg, and scramble them together. Pre-cook the frozen parathas to around 60% doneness. Put the butter in a heated skillet, then crack the egg into it and slowly fry it, swirling it around to ensure it cooks evenly. Sprinkle the top with shredded cheese when it's almost done to help the paratha stick to the egg. You can also add some chopped sausage, precooked bacon, or mushrooms at this time. Simply sauté the canned mushrooms with a pinch of salt and pepper, and fry the bacon in butter or without. After you've positioned it, gently flip it over and repeat the process on the opposite side. Gently flip it again if necessary, let it cook for a few second and done! Enjoy with any dip of your choice.
