Hígado de Res Encebollado, la receta de mi abuela(ESP/ENG)

Buenas tardes tengas todos mis amigos de @foodiesbeehive, feliz y productivo inicio de semana. El día de hoy quiero compartirles mi receta de Hígado de Res Encebollado como lo preparaba mi abuelita. prepararlo con su receta llena mi corazón de alegría y nostalgia, al recordarla y remontarme a mi infancia.

Today I want to share with you my recipe for Beef Liver Onion as my grandmother prepared it. preparing it with your recipe fills my heart with joy and nostalgia, remembering it and going back to my childhood.

Una anécdota muy particular es que a mi esposo no le gustaba el hígado, estando embarazada de nuestro primer hijo, bajaron mis niveles de hemoglobina y el doctor me recomendó comer hígado para subir mis niveles de hierro y ácido folio una de las vitaminas que posee el hígado. continuando con la historia mi esposo me veía preparar y comer el hígado con frecuencia, hasta que un día , me dijo por favor dame hígado que me provoco probarlo, y desde ese día lo come y forma parte de su dieta, por lo menos dos veces al mes lo preparo en casa para toda la familia.

-A very particular anecdote is that my husband did not like the liver, being pregnant with our first child, my hemoglobin levels dropped and the doctor recommended that I eat liver to increase my levels of iron and folio acid, one of the vitamins that has the liver. Continuing with the story, my husband saw me prepare and eat liver frequently, until one day, he told me please give me liver that caused me to try it, and from that day on, he eats it and is part of his diet, at least twice a month I prepare it at home for the whole family.

Sin mas preámbulos les comparto la receta:
1/2 kilo de hígado
2 cebollas
2 ramas de cebollin
Aceite, vinagre, un limón, salsa inglesa y sal al gusto.

-Without further ado I share the recipe:
1/2 kilo of liver
2 onions
2 sprigs of chives
Oil, vinegar, a lemon, Worcestershire sauce and salt to taste

Primeramente limpiamos nuestras cebollas y cebollin y cortamos en rodajas, reservamos. Aparte limpiamos el hígado quitando el exceso de grasa, si lo prefieres puedes cortar en tiras o dejarlo entero como bistek. A mi me gusta en tiras para rendirlo.

-First we clean our onions and chives and cut into slices, we reserve. Apart we clean the liver by removing excess fat, if you prefer you can cut it into strips or leave it whole as a steak. I like it in strips to render it.

Preparamos el secreto de la abuela para cortar el sabor amargo del hígado, con una emulsión en partes iguales de el jugo de un limón, vinagre y aceite. Integramos el hígado, la cebolla y el cebollin con la emulsión de vinagreta, y dejamos macerar 20 minutos para que el hígado absorba los sabores.

-We prepare the grandmother's secret to cut the bitter taste of the liver, with an emulsion in equal parts of the juice of a lemon, vinegar and oil. We integrate the liver, onion and chives with the vinaigrette emulsion, and let it marinate for 20 minutes so that the liver absorbs the flavors.

Transcurrido los 20 minutos, llevamos al fuego en un caldero, removemos para que se integren bien los sabores, cuando ya este casi listo agregamos cilantro picado, salsa inglesa y sal al gusto.

-After 20 minutes, we bring to the fire in a cauldron, stir so that the flavors are well integrated, when it is almost ready add chopped coriander, Worcestershire sauce and salt to taste.

Este fue el almuerzo de hoy en familia, hígado de Res encebollado acompañado de arroz, plátano frito y ensalada de tomate con pepino.
