Cheesy Stuffed Baked Potatoes
Welcome back!
Today I am sharing a versatile recipe that you can have either for a Brunch, Dinner, or even a breakfast. I will also share tips and trick how to make the perfect and cheesy stuffed baked potatoes.
Ingredients
- 3 potatoes
- 3 eggs
- chopped scallions
- Grated Cheese
- Butter for coating
- 1/4 tsp salt
- 1/4 pepper
- 1 tbsp olive oil
Sauce
- 50gr thousand island mayo
- 1 tbsp mustard
Drizzle the potatoes with 1 tbsp olive oil and 1/4 salt. Make holes with fork. Bake for 55 minutes to 60 minutes.
Scoop the potatoes with the fork and make a hole in the middle. Put butter, mix the scooped potato with the sauce mixture, put it inside. Crack an egg in the middle and add the cheese. Be generous with the cheese and the scallion.
If you don't want a half cooked egg, steam the potato for about 10 minutes before putting it into the oven. But if you like half cooked egg, bake the potato inside the oven for 25 minutes into 30 minutes.
Serve the baked potatoes with the sauce. If you want to get extra, add bacon bits or any meat bits into the mixture. Get crazy with the filling. If you like onion, add it instead of adding chopped scallion.
If you don't like mustard, you can also use sour cream sauce. But since I ran out of sour cream, I was using mustard and thousand island mixture.
Tips : If you want more cooked egg, steam the potatoes and the stuffing for 10 minutes before baking it. Also, to get more shiny look, add more cheese into it before putting the potatoes into the oven after the steaming process.
Though it takes about 65 to 75 minutes to prepare, but it's worth it. The meal is filling, it looks fancy, and you can also serve it if you have friends or family over. Can't beat anything made of potatoes. This morning our camp brekky was last night's mashed potatoes made into patties and fried, with some homemade tomato sauce and olives. So good.
oh wow! that's also similar to what I had last night. I still need to find olives around here, that one is such a luxury. Also, I am planning to make foccacia and is reading your old post about it. Any other tips I should keep in mind when making a foccacia bread?
