Let's say I really love noodle.
I can eat them forever and would rather have noodle than rice at any day.Growing up especially if you live in those top 10 instant noodle consumer like China, Indonesia, or South Korea, instant noodle considered a convenience. Even for me, as a kid my mom fed me instant noodles for breakfast almost daily which contributes to my love towards instant noodle. While we're aware of the risks eating instant packaged noodle, somehow we all still eat that. A lot of people even make excuses to add vegetables and eggs to make it look healthier. I suppose, that's the justification we have towards it and even for me, I am one of those people making excuses until a few months ago.
One morning, my mom came with a bowl of noodle. It was really simple, just plain yellow noodle on a bowl. But when I tasted it, it was just like the packaged instant noodle that I normally have. I was inspecting it and found oil and garlic on the bottom of the bowl. So, I rushed to downstair and my mom told me she made it herself. That very same day, she taught me how to make it and if i want to add more flavors, she showed me the sauces.
The noodles that we're using is still "instant" block noodles. It's dried one from the store that looks like this. They are commonly used for home made cooking over here and often accompanied most indonesian cuisines.
I have been keeping this recipe for a while but only today I got to set up my table and actually have the time to do that. Let's go to the ingredient first for a single serving.
Ingredients
- two blocks of noodle, If you want it to be extra healthier, make it from scratch.
- 4 cloves of garlic
- 2 chilli
- 2 tbsp of vegetable oil/ any cooking oils you have
- optional (2 teaspoon of fish sauce and oyster sauce)
This is how my tray looks like because it's easier that way to assemble the noodle.
How to make
- boil the noodle
- Finely chopped garlic and saute it until golden brown (not burnt) with 1 tbsp of cooking oil.
- Do the same with the chili
- Once everything is ready, prepare a bowl to assemble the noodles.
- First the garlic then chili then extra sauces.
- Add noodle on top and mix it together
- For extra protein, add fried egg on top
- There you have it! a lesser evil instant noodles 😂
Final result
That is the final look of this recipe. I eat this almost everyday for breakfast and sometimes if I have an extra time, I would make the noodles from scratch. It's not that hard when you have the ingredients. I no longer find indomie or store bought packaged noodles like Indomie appealing. I would rather make it myself and customize the flavors rather than buying it from the store. It sure does take extra work but it's delicious and I can have it as much and often as I want. When I am going on a low sodium diet, I normally just eat them without the oyster and fish sauces. Garlic oil and chili oil do wonders and I think it really a must have in every kitchen especially if you love noodles like I do. It took about 10-20 minutes to make it. Sometimes I also make the garlic oil before hand so that speeds up the whole process too. If you find this recipe a lot less salty, it's okay to give it a bit of salt to enhance the flavors of it.

I also like noodles (and pasta in general) more than rice. This recipe is very very good, I will try to make it.
Today, by the way, I made some spaghetti with mushrooms (canned, I don't get fresh ones here) and chilies, with a lot of soy sauce, they were delicious.

Errmm, meanwhile, Pinoys eat instant noodles with rice. LOL. Even my kids who don't even live in PH. It runs in the veins, I guess. XD Although, I personally don't eat noodles a lot.

Yikes, I'm definitely guilty of this one... I've been really a fan of instant noodles since then (from instant ramen to pancit canton, I really love to eat them), but due to health constraints, I've been forced not to eat a lot of them. So now, I'm cooking it with vegetables so that my mother will somehow view it as healthy ehehehe.
hahahaha maybe you can make it like that? it's not exactly instant packaged noodles and your mom would be fine with you eating noodles. Toss some vegetables and she'll never complain again.
ahahaha I basically did this one, and it somehow taste different. Maybe I blanched the vegetables a tad longer. Next time, I'll try blanching it in shorter time because maybe it'll taste better.

I only eat enough noodles and rice to get full. But a noodle is supposed to be a substitute for rice. But we love eating both at the same time. 😅
Oh my, if I learnt something like this, I fear there will be no going back. I love Indomie so much and it's something that no matter how many videos my Mom sends saying that people think it's cancerous(N/B: She's the one that introduced us to it.😄), I can't stop eating it. So I guess we're losing a faithful Indomie devotee?
I plan on turning people away from Indomie hahaha. Most of people around me are the same, they are saying it's cancerous but can't stop eating them lmao. Now, that I truly do and when I tell them, they look at me like I am the freak.
