Hoy les traigo una de mis comidas favoritas que es la sopa que aquí en Venezuela se llama Cruzado que costilla de carne y pollo. Nos reunimos en familia y no puede falta nunca hacer una sopa un domingo.
Esta vez la hice yo y aquí les cuento como lo fui realizando.
Primero que nada, comprar los ingredientes es muy importante jajaja
✅½ kg de costilla de carne
✅½ kg de pollo
✅1 kg de verduras picadas (yuca, ocumo, auyama, ñame)
✅2 jojotos picadas
✅1 puño pequeño de hierbas (cilantro, perejil)
✅1 cucharadita de sal y pimienta al gusto
✅4 Dientes de ajo picaditos y agua suficiente para cubrir las costillas.
Aquí les cuento como fue el proceso:
Poner el kg de costilla limpias en una olla de presión para ablandar la carne y que se separe con facilidad del hueso, añadir suficiente agua que las cubra y poner 4 dientes de ajo y una cucharada de sal.
Separar el caldo las costillas, desechar los trozos de grasa y reservar el caldo.
Colocar en una olla de suficiente tamaño, la cebolla, ajoporro, célery, finalmente picados, junto con el aceite.
Sofreír a fuego medio hasta que estén blanditos, unos 5 minutos.
Agregar las costillas y mezclar con el sofrito, por dos minutos, revolviendo constantemente.
Poner el caldo desgrasado para cubrir las costillas, añadir más agua si fuese necesario o en la medida que se vaya secando la sopa durante la cocción.
Agregar las verduras picadas, los Jojotos picado a la mitad o en ruedas gruesas, sal y pimienta.
Llevar a hervor y luego bajar el fuego y cocinar hasta que las verduras se ablanden, unos 30 minutos.
Incorporar el atado de hierbas 5 minutos antes de finalizar la cocción. Se rectifica la sal y pimienta cuando esté listo.
Servir acompañado con arepa o casabe y puede aderezarse con un poquito de picante o ajicero.

Today I bring you one of my favorite meals which is the soup that here in Venezuela is called Cruzado which is beef and chicken ribs. We get together as a family and we never fail to make a soup on Sunday.
This time I made it myself and here I tell you how I did it.
First of all, buying the ingredients is very important hahaha
✅½ kg of beef ribs
✅½ kg of chicken
✅1 kg of chopped vegetables (yucca, ocumo, auyama, yam)
✅2 chopped jojotos
✅1 small handful of herbs (cilantro, parsley)
✅1 teaspoon of salt and pepper to taste
✅4 chopped garlic cloves and enough water to cover the ribs.
Here I tell you how the process went:
Put the kg of clean ribs in a pressure cooker to tenderize the meat and make it separate easily from the bone, add enough water to cover them and put 4 cloves of garlic and a tablespoon of salt.
Separate the broth from the ribs, discard the pieces of fat and reserve the broth.
Place in a pot of sufficient size, the onion, garlic, leek, celery, finally chopped, along with the oil.
Sauté over medium heat until soft, about 5 minutes.
Add the ribs and mix with the sauce for two minutes, stirring constantly.
Add the defatted broth to cover the ribs, add more water if necessary or as the soup dries out during cooking.
Add the chopped vegetables, the halved or coarsely chopped Jojotos, salt and pepper.
Bring to a boil and then lower the heat and cook until the vegetables are tender, about 30 minutes.
Add the bundle of herbs 5 minutes before the end of cooking. Add salt and pepper when ready.
Serve with arepa or cassava and can be seasoned with a little bit of hot pepper or ajicero.
