En Venezuela conocemos a la papaya con el nombre de lechosa, debido a que cuando se corta del árbol o se hacen algunas incisiones en la piel cuando está verde, brota un líquido lechoso.
Es un postre tradicional que se prepara en Venezuela en la época de Navidad y para las celebraciones de fin de año

Los ingredientes
2 kilos de lechosa o papaya verde
1 kilo de papelón aproximadamente (melaza de la caña de azúcar)
2 tazas de azúcar, 1 cucharada de bicarbonato
1 y 1/2 cucharadita de clavos de olor y agua

Preparación
Se le hace corte para que el fruto bote la leche

Se le sacan las semillas y se deja bien limpias y se tiene el cuidado de que no quede concha. Se pica en tajadas delgadas y se agrega una cucharada de bicarbonato y se deja reposar.

Puedes tenderla al sol de la mañana durante unas horas antes de cocinarla
Colocar en la olla el papelón, el azúcar, los clavos y el agua para hacer el almíbar. Dejarlo cocinar en la olla destapada durante 15 minutos.
Pasar la lechosa a otra olla grande y colocar sobre ella el colador de pasta. Poner dentro un liencillo. Pasar a través de él el almíbar y dejarlo caer en la olla que contiene la lechosa. Ahora poner la olla en el fuego y cocínala durante aproximadamente una hora y media. Sabrás que el almíbar está a punto cuando las gotas caigan lentamente de una cuchara de madera, formando un hilito.
Retira la olla del fuego, deja enfriar y mételo en la nevera. Tapa la dulcera con papel de plástico.

Remove the pot from the heat, let it cool and put it in the fridge. Cover the candy bowl with plastic wrap.

La lechosa debe quedar traslúcida. El dulce se guarda en la nevera en frascos de vidrio o en una dulcera y se puede almacenar por varias semanas. Queda delicioso y si no consiguen papelón pueden sustituirlo por azúcar morena.
