Pork Stew in a Cold Morning

It is a cold Sunday morning. I am thinking to cook food or soup that will fit this bed weather. So it comes up to my mind to cook “ nilat-ang baboy”. Nilat-ang baboy ( bisaya dialect) . “ Nilat-an” is a bisaya Filipino word means boiled . Aside from pork you can use shrimps or beef and add vegetables of your choice. I personally like to add squash , pechay and taro and sayote. Taro can make the soup creamy , chunky and thick texture. This one is the easiest Filipino dish that anyone can prepare. You will just throw everything in the pot and let all the ingredients become tender. So if you are Filipino chances are you already familiar with this dish . You don’t need much ingredients. It is healthy, affordable and easy to prepare. It is lucky for us to buy affordable vegetables here in our province.

Below are the list of my preferred Ingredients:

*1/2 kilo of pork ribs ( cut into serving)

*2 pieces of pechay

*1 big slice of squash

*1 medium size of taro

*1/2 cut of medium sayote

*6-8 cups of water
*sibuyas dahonan
*salt to taste
*seasoning granules ( magic sarap)
*3 finger chilis

COOKING PROCEDURES

  1. Place the pot over the fire and let it dry. Put little oil on the pot.

  1. Add the pork and mix it with the oil. Season it with salt and seasoning granules . Simmer for about 2 minutes.

  1. Add the water , cover the lid and bring it to boil. Remove all the resulting scum that will rise on the top of the pot.

  1. Lower the heat and simmer it for about 30-45 mins or until the pork is tender.
  2. Add finger chilis and spring onions.
  3. Add the taro and let it become tender.

  1. Add the rest of the vegetables , squash and sayote.

  1. Lastly add the pechay . Do not overcook the green vegetables.
  2. Remove from heat and serve while hot.
