Hi, foodies in the Hive!
Hope you're having a nice day 😁 I'm happy to share this recipe. It's one of those cakes, ideal for that lazy coffee we usually have after brunch on a quiet Sunday at home like yesterday.
I think I never take moments like this for granted. In my opinion, not as humble as you may expect I'm afraid, little moments make happines. If we aren't able to find joy and sometimes solace in the minuscule moments that make up our days, we may miss joy and solace forever, as we never know what's around the corner.
I made a low sugar, non sticky chocolate glaze for this cake because that's the way my father likes it, and half of this was for him--for a sweet morning snack. You can cut a piece of this cake and soak it in your coffee, hehe. Not an elegant thing to do, I know, and because of that, it's so pleasant 😋 Personal opinion giveaway only for today! Haha.
INGREDIENTS
For the Chocolate Glaze:
- 1/5 cup cocoa powder (unsweetened)
- 1/5 cup peanut butter
- 1/5 cup brown sugar
- 100 ml water
For the cake:
- 400 gr overripe bananas
- 150 gr sugar
- 75 gr brown sugar
- 75 gr margarine (I used salted)
- 1 cup egg (4 S-M eggs approx.)
- 250 gr all purpose flour
- 1 teaspoon baking soda
- a dash of white vinegar (on the baking soda)
- 1 tablespoon ground cinnamon
- 1 tablespoon vanilla essence
- 100 gr walnuts
Sometimes, I've substituted half of the wheat flour for oat flour; the result is almost the same; perhaps a slightly moister crumb.
THE PROCESS
This is the kind of cake you can make in a single bowl.
Take a bowl large enough to hold all the cake ingredients and put the sugar, peeled bananas and margarine in it. Mash it! I used a fork.
Add the eggs. I used fresh ones, so I just broke them and poured them directly into the bowl.
Add the ground cinnamon and vanilla essence. Mix well.
Add the sifted flour.
And mix. I used a pastry spoon so I could scrape the walls of the bowl. It's a sticky batter.
As I was using all-purpose instead of self-rising flour, I added baking soda and white vinegar.
The white vinegar on the baking soda makes the bubbles this cake needs to make some nice alveoli.
Fold it.
Break the walnuts and add them in the bowl.
Mix.
Grease your favorite bundt cake pan and pour in all the batter. I used only margarine to grease mine and the cake unmolded easily. I let it bake for 45 minutes at 350 F.
It had a nice golden brown color.
Top and bottom.
Now the Chocolate Glaze 😋
The first time I made this glaze was only with the intention of putting an end once and for all to the jar of peanut butter, which seems to last for eternity 😏😄 But it turned out something unexpectedly good: not only did we like the glaze a lot at home, but once it cools, it dries enough not to stay on your fingers. This is great for not having dishes to do, as the cake immediately transforms into fingerfood.
Just put all the ingredients into a saucepan, mix, and cook over low heat while constantly and vigorously stirring.
You don't need to let it cook much, just enough for the sugar to melt completely. When you see that it turns creamy and homogeneous, it's done.
Cover the cake when it's still hot.
You'll see how easily it sticks to the surface.
If you have decoration skills, well, you can work your magic as this glaze is quiet friendly. This is as much as I could do this time 🙃
It was good if you ask me, considering this is just a Sunday cake to eat with coffee 😁
Wait for 20 or 30 minutes while it cools, and then you can slice it!
Both the cake and glaze can stay out of the fridge for some days. I have kept it for 5 days on the counter (away from the sunlight).

You know, I fell in love with peanut butter the first time I tried it a few years ago (it wasn't popular here; it was one of those "American things"). But now the huge jar is just too much, hehe. I'll buy a small jar next time.
I use giphy.com for the GIFs. They are open-source, so you ca use it for Hive. I record the videos with my phone and download them to my laptop. From there I edit them on Giphy. For some reason what I edit from my phone doesn't upload to Hive, so I do it on the computer.

I had never thought of peanut butter not being popular other places! It is totally an American stable 😂! A jar of peanut butter used to last me a year though, at least until my son decided that PB bread was the only food he wants to eat 🤦♀🤣

Peanut butter became popular here after the terrible crisis in 2016-2017. Stores were filled with imported products after that. But first came "the boxes", which people living abroad sent for heir relatives here. These boxes helped imported goods become popular; now you can see them anywhere around.
It's good that peanut butter is at least edible and so nutritious. I had a little friend who would eat dirt and other Burtonish delicacies when his momma wasn't seeing 🤭
This cake reminds me of my diabetic mother. She often loved making devils cake. This looks so much like it without the glaze tho. 🤤✨ Seems like a pleasurable experience that you had while making it and to have it with some coffee. Just Yum!
My father is diabetic as well. He takes his medicines and keeps a diet, but he likes a homemade cake now and then, and I try to please him. I hope your momma is doing OK!

Me hiciste recordar que de niña mi mamá nos servía en el desayuno pan con margarina Mavesa y café con leche y a mi me encantaba meter el pan en el café con leche! Jajajajajaja! Y como no, ahora de adulta, me encanta meter el bizcocho en el café, pero negro!☺️
Por otro lado, amé la altura y el color de tu torta. Simplemente, hermoso y el glaseado de chocolate me pareció toda una genialidad porque lo hiciste con crema de maní, como para chuparse los dedos. Jeje! Tengo que prepararla para mis decoraciones chocolatozas. Por cierto, amo comer tostadas de pan con crema de maní y mermelada! Lo máximo. 😋

Mira, el glaseado es fácil, práctico y sabroso. Y en caliente se deja moldear fácilmente.
Yo abro una hogaza de pan árabe y unto un lado con mantequilla de maní y el otro con mermelada de uva o de piña y luego los (re)uno, jeje. Muy rico. Lo colo sin tostar.

Banana cakes always save me from wasting overripe bananas--I keep buying more than we can eat because they are really inexpensive over here. Fortunately, I can make bread and cake for tea & coffee, friend... you're so right!

The topping is tasty (if you like cocoa and peanut), easy and costs little money. I prefer using powdered cocoa because I can control the amount of sugar I'm adding, just in case...
