Plantain cake mixes are so varied and versatile; I loved that you added peanuts and cheese in the batter. It's a must try. It's usually bananas that are ripened in this house; bananas don't survive to see much of ripe age, hehe.

Cheese and peanuts go together perfectly. I remember that mom made one with topochos and used a green, spicy cheese that dad bought in Barinas, that cake was heavenly.
