I am thankful every day for the opportunity I have to snack and do it with cookies, sweet, salty, homemade or not, when there are homes that only allow small meals and maybe one or two a day...that in those homes prosperity arrives and they can have better food.
I share this time some delicious cookies that one of its ingredients is the carrot, a vegetable that adapts to everything from savory foods to desserts.
The process is simple, just gather the ingredients, join, mold and bake, of course the most important step is to taste with a delicious coffee and feel the flavor of the nuts in every bite.
Los ingredientes a utilizar
2 tazas de harina de avena
1 taza de zanahoria rallada
2 huevos
1 cucharadita de polvo de hornear
1/2 taza de nueces picaditas
1 cucharadita de esencia de vainilla
3 cucharadas soperas de miel
Ingredients to use
2 cups of oat flour
1 cup grated carrots
2 eggs
1 teaspoon of baking powder
1/2 cup chopped walnuts
1 teaspoon vanilla essence
3 tablespoons of honey
For the oat flour, the oat flakes are taken, in this case the blender was used to process them, until the two cups of oat flour are made.
Ready the ingredients in their measures, ready to follow in the preparation.
In the bowl of your choice, place the oat flour, baking powder, grated carrot, vanilla, chopped walnuts, eggs and honey.
With a wooden paddle or the one of your choice, mix everything together until each ingredient is well integrated.
As one of the ingredients is oat flour, it tends to be sticky, not as easy to handle with your hands as other cookie doughs.
With the help of two teaspoons, a soup spoon and a dessert spoon; take portions of the mixture and place it in the previously greased tray...mold it with the teaspoons so that the mixture does not stick, have a container of water to wet the teaspoons every time you need it.
The best effort was made to make them round, and in the trays take them to the previously heated oven, bake for about 20 minutes and they are ready, they can be easily removed from the tray.
If desired, they can be left a little longer in the oven so that they are a little more toasted, without neglecting that they are not going to overcook.
This is how delicious they are, the color is due to the honey and oatmeal. The flavor of the nuts is spectacular, and a heavenly sweet, only honey was used, it gives a very distinctive touch in the sweetness.
