Today being Sunday, I thought of making meatballs, the one that I always bake not fry. I still have a blue cheese at home so it will be the main sauce for today. Have you tasted a blue cheese? What they have in Italy is called Gorgonzola and it has the same consistency as the one I am using for this recipe here which is made in Germany. I have decided to make a sauce out of it with lots of onions and garlic. I used Spaghetti noodles and this sauce resembles the white Carbonara style.


Meatball Spaghetti with Blue Cheese Sauce
Ingredients:
For the Meatballs:
400 Grams ground Beef/Pork (50/50)
4 Pcs. Big toast bread, diced
1 egg
1 medium onion, cut into very fine pieces
1 tablespoon soy sauce
1 Worcester sauce (optional)
salt , ground black pepper
125 ml skimmed milk

Preparations:
Preheat the oven at 175°C / 347°F
How to make the Meatballs
Except for the ground meat, mix all the ingredients in a food processor. The consistency of the toast should be moist (not watery). Transfer the blended ingredients into a bowl, add the ground meat and with your hands, mix until the toast ingredients blend with the ground beef/pork. Shape into small meatballs and in a baking sheet lined with wax or baking paper, place the meatballs in rows and bake in a preheated oven in the lowest rack at 175°C /347°F for about 12-15 minutes each side, turning once until all are golden brown in color. Remove from over and set aside for later use.

How to make the Blue Cheese Sauce and cooking the noodles:
Ingredients For the Sauce:
1 pack blue-cheese
1 onion, diced
5 garlic cloves, crushed and chopped finely
300 grams spaghetti, boiled "al dente"
grated Grana Padano cheese to garnish when serving
salt and pepper
1 1/2 Cups Semi skimmed milk




Preparations
1... In a bowl, cut the blue cheese into squares, set aside.
2... In a pan with 2 tablespoons cooking oil, fry the garlic and the diced onions until golden brown in color. Add the blue cheese and the skimmed milk. Bring to boil and simmer but continuously stirring until the blue cheese pieces are dissolved, add a bit of salt and a dash of ground black pepper. Remove from the heat and set aside.
Note: As the blue cheese is already salty, be careful in adding salt. Sample first whether it suits your taste preference.
3... Meanwhile, boil enough water for the noodles, either you break the spaghetti or leave it long then boil for about 3 minutes or until they become soft or "al dente" as they say it in Italy. drain the water. add the spaghetti to the casserole of the blue cheese. Mix until the noodles are thoroughly coated with the sauce. The liquid sauce will be absorbed by the noodles.


Serving:
Heat the Meatballs in the microwave. Set the blue cheese spaghetti on a plate, add the meatballs on top and garnish with the grated Grana Padano cheese...Serve hot!

Blue cheese is on my dream list for a long time. Never found it :)
Hello lovely! About the blue cheese, maybe you can have a look at a supermarket that has imported cheese.. I never had this before in the Philippines. But someone told me to look at a certain supermarket, then I found it. The only thing is the high price because it was imported. I haven´t heard that anyone was manufacturing this dairy before in my country. Here in Austria, they are not costly because they have plenty of cows in the farm. Lol.
