Roasted aubergines with yogurt-sesame-sauce - Cooking Adventures #1

The ingredients

  • 2 aubergines
  • 450g Greek yoghurt
  • 3 tablespoons "El Tahin" sesame paste (or similar brands)
  • 1/2 teaspoon honey
  • 2 teaspoons sesame seeds
  • 1 tablespoon olive oil
  • 1/2 bio lemon
  • a small bunch of parsley

Spices:

  • salt
  • paprika powder
  • cumin

Step 1

Cut the aubergines into small pieces, but not too small or else they will burn in the oven.
Wash and dry them. Afterwards rub them with salt, paprika powder, cumin and olive oil.

Put the aubergines in the preheated oven and roast them at 200 degrees for 30 minutes.

Cut your preferred amount of parsley and mix half of it with the 450g of yoghurt, 3 tablespoons sesame paste, 1/2 teaspoon of honey and 2 teaspoons of sesame seeds. Use the other half of the parsley to sprinkle the aubergines once they are out of the oven. Refine the sauce with the juice of the 1/2 lemon and if it is a untreated bio lemon you can also add the grated peel of the lemon.
I like lemons.
