My husband sent me a text message when I was at work, telling me that he craved to have stuffed squid with rice. As usual, I asked him to go to the market nearby my house to prepare the suggested ingredients before I got home.
Looking at the squids he bought, I couldn't imagine where on earth could he find the very tiny ones, which made it really challenging for a stuffed squid recipe.
I would describe the process of making my husband's wanted dish as a crafting process where I had to be careful and meticulous enough in order to cram a very small amount of ground pork inside each squid cube one by one. My husband was also very patient looking at me with excitement.
- Preparation
Clean the squids and separate the tentacles from the body
Add seasonings (salt, sugar and pepper) into the ground pork, add ground onion to increase the flavour
Fill the ground pork mixture into the squid tubes
Chop tomatoes and spring onions into small pieces
- Cooking
Add vegetable oil to a hot pan at a medium heat, add some ground garlic
Carefully place each tube of stuffed squid on the pan, fry it in 10 minutes
- Add chopped tomatoes into the pan, add some water to well cook the tomatoes
- After about 10 minutes, the tomatoes will become a tomato sauce, then add some fish sauce (can be replaced by salt), sugar and pepper into it
- Before turning the oven off, add chopped spring onion
