OUR NATIVE DELICACY😋

Hi foodies, how are you all doing? I'm sure you are pretty good.
Today I bring to you our native delicacy which is know as USUNG IKPONG YE AFIA EFERE, known in English as COCOYAM FOOFOO WITH NATIVE WHITE SOUP.

it's obvious that the modern culture has eaten deep into Nigerians and Africa as a whole, and we forget about our culture. Most people prefer English food to their own native food.
That's why I thought it wise to prepare this meal today and share it on this platform, you can give it a try,it's indeed yummy and nutritious too.

Ok let me begin with Usung ikpong known as cocoyam foofoo.

Ingredients: cocoyam and water.
HOW IT IS PREPARED

  1. Peel the cocoyam and cut to desired size.

2.wash them into the pot.Add some quantity of water depending on the quantity of the cocoyam, cover the pot and boil it till it gets soft

  1. when it's soft , drain the water out
  2. Mash the boiled cocoyam traditionally with mortar and pestle

or using a food processor or blender.
mash it to desired texture .mould it out of the mortar.

It is eaten with native white soup called AFIA EFERE.

Afia efere (Native white soup) is also our native delicacy. it is called white soup because it is oilless . It is very easy to prepare and it saves time.
Ingredients:

  1. Goat meat or any meat of your choice
    2 . Smoked fish
  2. Yam or cocoyam
  3. stock fish
  4. uziza leaf
  5. Uyayak( 1 Aidan fruit)
  6. Fresh pepper
  7. seasoning cubes
  8. Salt etc
    Once you have all the ingredients
    This is how it is made;
  9. wash the meat , stock fish and fish into the pot. Add pepper, seasoning cubes and salt, steam it for about 10 minutes
  10. After steaming it, add a calculated quantity of water into the pot of steamed meat , add blended crayfish,salt pepper and seasoning cubes and taste if all the ingredients is balanced.
  11. Allow it to boil.
  12. wash the Aidan fruit and put it into the pot while it's still boiling.
  13. Take out part of the cocoyam foofoo, add medium size balls into the pot while it's still boiling. it serves as a thickener.
  14. Once the yam is dissolved
  15. add uziza efere

that's all for Afia efere
The soup is ready to be served with your cocoyam foofoo😋

I've always wanted to try out this cocoyam fufu and the process doesn't look that taskful. Some day I shall try it out.
