Greetings reggaemuffins and friends!
I recently got some plantains and decided to be adventurous. Here are some things I made.
It’s Golden Week in Japan and with a bit of time I decided to try my grandma’s plantain porridge recipe but as I usually do- I upgraded it.
Ingredients
1 green plantain - diced - boiled - blended smooth
Cinnamon sticks - added to 3 cups hot water
Tea spoon of salt
1/2 cup coconut juice
1/2 cup soy juice
Table spoon of vanilla
1/2 teaspoon cinnamon
1/2 ts nutmeg
1/2 cup oatmeal
Peel your plantain, slice it , boil it then blend it.
Add the blended plantain to your hot water boiling on medium heat - stir often - don’t leave unattended- it may boil over
Add coconut milk and and oatmeal let them boil
Then add soy milk
Add spices
Add a bit of salt
Sweeten with honey / condensed milk/ sugar or molasses.
I went with condensed milk and a tiny bit of molasses. Enjoy hot , warm or cold.
It’s a Golden week indeed- walk , ride or drive - do so safely.
